- Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.
- Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.
- Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

- Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with cooking spray; set aside.
- Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
- Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.
- Add apples and, if desired, nuts, to batter; mix to combine. Add vanilla, mixing until incorporated.
- Pour batter into prepared pan, and bake until a cake tester inserted in the center comes out clean, 75 to 90 minutes.
- Remove from oven, and cool slightly on a wire rack.
- Invert cake onto rack; turn cake right-side up to cool completely on rack, and serve drizzled with caramel sauce.
APPLE SPICE TEA
This recipe isn't really a complete original like some of my others since the idea of apple spice tea has been around for ages. The particular ingredients and quantities, however, are my own doing. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

APPLE-SPICE TISANE
Steps:
- Add the apple peels, cloves, cinnamon sticks, lemon zest, a drizzle of honey if using and 2 cups water to a medium saucepan. Bring the mixture to a boil and cook for 1 minute. Turn off the heat, cover the saucepan and let the mixture steep for 15 minutes.
- Strain the tisane into another small saucepan and heat it back up. Taste, adding some honey and/or lemon juice if desired. Serve hot.

- Heat oven to 180C/fan 160C/gas 4. Butter a 900g/2lb loaf tin and line with a strip of baking paper, or use a loaf tin liner (see tip, below). Beat together the butter and sugar until pale and creamy, then beat in the eggs one by one. Grate half the apple and mix it into the batter with the vanilla, dried fruit and ground almonds. Mix the baking powder, flour and spices together with a pinch of salt, then fold into the mix until even. Spoon into the tin and level the top.
- Thinly slice the remaining apple half, toss with the lemon or orange juice, poke the slices a little way into the batter, then sprinkle with 1 tsp more sugar. Bake for 45 mins, then turn the oven down to 140C/fan 120C/gas 1. Cover the cake with foil, then bake for another 45 mins until a skewer inserted into the middle comes out clean. Cool in the tin.
- To finish the cake, melt the marmalade or jam in a small pan, sieve to remove any lumps, then brush it over the cake to glaze the top. Serve cut into thick slices, and spread with a little butter, if you like. Will freeze for up to 1 month.

- In a small saucepan, combine the apple juice, cloves and cinnamon stick. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes., Meanwhile, in a large saucepan, bring water to a boil. APPLESAUCE SPICE TEA CAKE
Steps:
- Baking time: 55 minutes
- 1. Preheat the oven to 350°. with a rack in the center of the oven. Coat the sides and center tube of the pan with the butter. Toss in the flour and shake the pan to coat the tube surface and sides. Knock out the excess flour. Set aside.
- 2. Place a mesh sieve over a medium mixing bowl and add the cake flour, baking powder, baking soda, cinnamon, allspice, nutmeg, ginger, and salt. Shake the contents into the bowl and set aside.
- 3. Break the eggs into a large mixing bowl. Stir them briefly with a fork to break them up slightly, then add the dark brown sugar. With the mixer on high speed, beat the eggs with the sugar until the mixture is very thick, about 6 minutes. Move the beaters around the bowl and scrape down the sides of the bowl with a rubber spatula several times while mixing. Reduce the mixer speed to medium and beat in the oil and vanilla. Beat until the mixture is smooth, about 2 minutes. Reduce the mixer speed to low and beat in the flour mixture alternately with the applesauce, beginning and ending with the flour mixture. Fold in the walnuts with a rubber spatula. Scrape the batter into the prepared pan and smooth the top with a rubber spatula.
- 4. Bake for 55 minutes, or until a cake tester inserted into the center of the cake comes out clean. Transfer the pan to a wire rack to cool for 10 minutes, then invert the cake onto the rack. Remove the pan and let the cake cool completely.
- 5. The baked cake can be stored at room temperature, wrapped in plastic wrap, for up to 2 days, or refrigerated for up to 1 week. It may also be frozen for up to 3 months. Wrap the cooled cake securely in plastic wrap, then place it in a freezer-strength recloseable jumbo-size plastic bag. Label the bag with a waterproof marker and freeze. Defrost the cake, in its wrapping, overnight in the refrigerator or at room temperature for 3 to 4 hours.
OLD FASHIONED APPLESAUCE SPICE CAKE
I found this recipe on a Duncan Hines spice cake mix box. It was easy to make. It was not too sweet, but sweet enough! I used chunky applesauce & I did not frost the cake -- I just sprinkled it with cinnamon sugar, but the frosting sounds good too.

- Grease & flour a 13 X 9 pan.
- Combine cake mix, eggs, applesauce, and oil in a large bowl.
- Beat at medium speed with an electric mixer for 2 minutes.
- Stir in nuts.
- Pour into pan.
- Bake at 350 for 40 minutes or until toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes.
- Invert onto cooling rack, then turn right side up.
- Cool completely.
- For frosting:.
- Combine vanilla frosting and cinnamon.
- Stir until well blended.
- Spread over cooled cake.
