APPLE WALNUT CAKE
This moist apple walnut cake is perfect for brunch. It gets its appeal from big chunks of sweet apples, nutty flavor and creamy frosting. The recipe, originally my mom's, is a unique harvest treat.

Steps:
- In a large bowl, beat sugar and eggs. Add oil and vanilla; mix well. Combine the flour, baking soda, cinnamon, salt and nutmeg; gradually add to sugar mixture, mixing well. Stir in apples and walnuts. Pour into a greased and floured 13x9-in. baking pan. Bake at 350° until a toothpick comes out clean, 50-55 minutes. Cool on a wire rack., For frosting, beat cream cheese, butter and vanilla in a bowl. Gradually add confectioners' sugar until the frosting has reached desired spreading consistency. Frost cooled cake.

- Place apples in a greased 9-inch square baking pan; spread them out evenly.
- In a bowl, add 1/2 cup sugar, cinnamon, and coarsely chopped walnuts; stir to combine.
- Sprinkle mixture over apples.
- In another bowl, add the flour, 1 cup sugar, baking powder, and salt; stir to combine and set aside.
- Mix together the egg, half-and-half, and butter in a bowl; add to flour mixture; beat until smooth.
- Pour over apples.
- Sprinkle with finely chopped walnuts.
- Bake at 325° for 1 hour or until pick comes out clean.

APPLE-WALNUT COOKIES
I've gotten into the habit of baking a dozen or so cookies to eat now and then freezing what remains for another day. Whether you're having a dinner party, last-minute guests, or just want a spur-of-the-moment treat, always having homemade cookies on hand--instead of a box of store-bought cookies that will be stale within a week--is just about the coziest thing ever.

- Preheat the oven to 350 degrees F.
- In a large bowl, combine the flours, oats, baking soda, baking powder, salt, and cinnamon.
- Using a stand mixer or hand mixer, beat the butter and honey on medium speed for 1 minute, or until creamy. Add the egg and vanilla and beat on medium speed until smooth, about 1 minute.
- Slowly add the dry ingredients to the wet, mixing to incorporate as you go. Stir the apple and walnuts into the batter.
- Drop 1 tablespoon of dough at a time onto a baking sheet lined with parchment or a silicone baking mat, keeping space between the cookies (see Cook's Note). Bake for 12 minutes, or until golden. Remove to a cooling rack and serve.

- Preheat oven to 375 degrees F (190C).
- Butter a 9 inch square baking pan.
- Peel, core and slice the apples into 1/3 inch slices.
- Toss them in a large bowl with the lemon juice to prevent discolouration.
- Layer the apples in the baking pan.
- Combine the flour, oats, walnuts, coconut, brown sugar, cinnamon, allspice, salt and vanilla.
- Add the butter and cut in until mixture resembles coarse meal.
- Sprinkle over apples and bake in the middle of the oven for 35-40 minutes; or until topping is browned and apples are tender.
APPLES WITH HONEY AND CRUSHED WALNUTS
Tradition is a beautiful thing, unless it requires you to make something you don't enjoy making or eating. For me, that's charoset. Classically, it's an apple-walnut mixture (occasionally including a touch of cinnamon or dried fruit, or a combination) that ranges from chunky-relish to chunky-paste, and it's never been my favorite thing on the table. I've always wanted it tangier, crunchier and, well, I wanted a salad. This is that salad. It's meant to be more acidic than sweet, but adjust with vinegar and honey as needed to suit your preference. A note: Nearly everyone who ate this salad said it was their favorite part of the whole meal, which bruised my matzo ball ego, but I thought you should know.

- Heat oven to 325 degrees. Spread walnuts in an even layer on a rimmed baking sheet. Toast walnuts until golden brown and fragrant, 8 to 10 minutes. (You can also do this in a toaster oven.) Let cool. Using your hands or a knife if you like, crush or finely chop walnuts. Set aside.
- Thinly slice apples (with a mandoline or a sharp knife) any way you please. (Rounds are excellent if you don't mind eating the edible core.) Scatter the slices onto a large serving platter or bowl. Drizzle 2 tablespoons apple cider vinegar over apples, and season with salt and pepper; give them a little toss and drizzle with 2 tablespoons honey. Taste an apple slice and adjust seasoning with more vinegar or honey, as needed. Sprinkle with walnuts, and finish with a drizzle of olive oil, flaky salt and pepper.

- 1. In 3-quart saucepan, over medium heat, bring corn syrup to a boil, stirring constantly. Stir in peanut butter until well combined. Remove from heat. Stir in KELLOGG'S CRISPIX cereal until evenly coated. Spread cereal mixture in 15 x 10 x 1-inch jelly roll pan or cookie sheet coated with cooking spray or lined with waxed paper.2. - 1. In medium-size mixing bowl, combine crushed cereal, flour, and salt. With pastry blender, cut in margarine until mixture resembles coarse crumbs. Add milk, stirring until well combined. Using small amount of additional flour, roll half of pastry to fit 9-inch quiche dish or round cake pan. Place pastry in bottom and on sides of dish. Set aside.2. Combine apples, lemon juice, granulated sugar, cinnamon, and nutmeg. Place in pastry crust. Set aside. Roll out remaining dough on lightly-floured surface to fit tart. Place over apples. Prick crust with fork 4 times. Decorate with pastry scraps, if desired.3. Bake at 375°F about 45 minutes or until golden brown and apples are tender. Remove from oven. Glaze with mixture of powdered sugar and water. Serve warm or cold.
