YUMMY APRICOT PECAN BREAD

Every time I prepare this yummy bread, I always receive raves. It's perfect with coffee or as a gift, plus it's really quick and easy to prepare. -Joan Hallford, North Richland Hills, Texas

Steps:

  • In a large bowl, combine the first 6 ingredients. In a small bowl, beat the milk, eggs and butter; stir into dry ingredients just until moistened. Fold in the cheese, apricots and pecans. Spoon into 2 greased 8x4-in. loaf pans. Combine the topping ingredients; sprinkle over batter. , Bake at 350° for 40-45 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Freeze option: Securely wrap and freeze individual cooled loaves. To use, thaw at room temperature.

2-1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup 2% milk
2 large eggs, room temperature
1/3 cup butter, melted
2 cups shredded cheddar cheese
1 cup finely chopped dried apricots
3/4 cup finely chopped pecans
TOPPING:
3 tablespoons packed brown sugar
1 tablespoon butter
1/2 teaspoon ground cinnamon

This is a quick , easy Appetizer, that starts with a favorite of mine " Cresent Rolls " I always like to have a good appetizer , when we play cards, this one is a good one to make. This recipe is from epicurious.com and Dash Recipes.

Steps:

  • Pre- Heat Oven to 375 - Take rolls out of can, Unroll , But Do Not Separate, like you would to make into Rolls, Press into a Rectangular Crust on the Baking sheet. - In a Bowl mix the jam with the Butter, and spread over the crust, Sprinkle the Pecans and gorgonzola all over the top.
  • Bake for 13 minutes Or Untill Crust is a Golden Brown - Take out of Oven and Sprinkle with Thyme - cut into Squares Or Strips .

  • Preheat oven to 350 degrees. Generously grease loaf pans. (I made one 9x5x2 loaf and 1 mini loafs). In a small bowl, toss diced apricots with lemon juice.
  • With an electric mixer, cream together butter and sugars until. Beat in egg and vanilla. Stir in apricots.
  • In a medium bowl, whisk together flour, baking powder, salt, nutmeg and ginger. Add flour mixture to creamed mixture, alternately with the milk, starting and ending with the flour. Fold in chopped pecans.
  • Fill loaf pan(s) 2/3 full with batter. If desired, sprinkle rolled oats over tops of batter. Bake for about 50 minutes for a large loaf (about 25 for a mini loaf), or until a toothpick inserted in the center comes out clean.
