ARMENIAN POTATOES

Found this in one of our local Church cookbooks making for potatoes that are a touch different - and always an empty bowl! The recipe calls for 'old' potatoes - I find for most part I never have old potatoes - if I do not have large potatoes I eyeball an equivalent. Weighing - 11/2 pounds of potatoes takes about five what I call regular sized potatoes. Serving size is a quesstimate as it depends what you are serving and how big the helping!

Steps:

  • Wash and peel potatoes, cut potatoes and onions in chunks.
  • In a large bowl mix together the oil, tomato paste, water, salt, paprika, combine with potatoes.
  • Add onions, pepper to taste, parsley and toss to mix.
  • Bake in a covered dish in a preheated 325 degree oven for about 45 minutes or until potatoes are soft.

1 1/2 lbs large old potatoes
2 large onions (cut in chunks)
1/4 cup vegetable oil
3 tablespoons tomato paste (recipe suggests catsup as a sub)
1/2 cup water
1 teaspoon paprika
1 teaspoon salt (or to taste)
pepper
1/2 cup finely chopped fresh parsley (I add the parsley) (optional)

I had this potato salad at a small Armenian deli in Glendale. I was impressed by how simple but beautiful and delicious it is. So, I decided to try to duplicate the salad at home. I hope you like my version. I call the dressing "Armenian Salsa" because it's a great topping for lots of other things.

Steps:

  • Steam the potatoes for about 30 minutes.
  • Allow to cool, then.
  • peel off the skin.
  • Cut potatoes into a 1 inch uneven dice shape.
  • Chop the parsley and mix with the other salsa ingredients.
  • For a spicier salsa, substitute 1/2 of the parsley with watercress.
  • Mix the potatoes with the salsa.

  • Khash. While khorovats is eaten during all seasons, khash is a dish that really should be served only when it’s cold outside. Normally, the “khash season”, as the locals call it, starts in October and lasts till the end of February.
  • Harisa. Harisa is made with cracked wheat, called korkot. Chicken can be added to this porridge to make it tastier. It is cooked for a long time, and stirred continuously to ensure the meat doesn’t stick to the pan.
  • Zhengyalov Hats. While Armenians love meat, they are not opposed to a little vegetarian food. Zhengyalov hats is the perfect choice for vegans and vegetarians, as it is different types of greens in a dough.
  • Tolma. Tolma is one of the most talked-about dishes in Armenia. Neighboring countries have similar dishes and it is similar to the Greek stuffed grape leaves.
  • Ghapama. This unusual dish is unique to Armenia. Ghapama is a rice-stuffed pumpkin. Raisins, other dried fruits, and nuts are added to cooked rice, and that is stuffed into the pumpkin which is then put it in the oven.
  • Fish Gata. Gata in Armenian means pie, but this dish is not a fish pie at all. I don’t know why this is called fish gata, but I know one thing for sure; the taste of this dish will stay with you for a very long time.
  • Kyufta. Another dish with meat that Armenians absolutely love! Kyufta is made with beef. First, you beat the meat with a wooden hammer to make it as soft as cotton candy (I know, not the best comparison…).
  • Eggplant Rolls. Eggplant rolls are a very popular traditional dish in Armenia and can be made with various stuffings. My mom always puts either tomato sauce or strained yogurt with cucumber and garlic.
