Pumpkin Chili image

Steps:

  • Brown the ground beef and pour off grease.
  • Add the rest of the ingredients to the pot, stirring well. Simmer for 1 to 2 hours.
  • Serve with crackers, hot bread, or garlic bread.

2 cups fresh pumpkin or 2 cups canned pumpkin
3 lbs ground beef
2 (16 ounce) cans red kidney beans
2 medium onions, chopped
3 (15 ounce) cans diced tomatoes
2 tablespoons chili powder
1/4 teaspoon red pepper
1 teaspoon sugar
1 teaspoon salt
2 bay leaves
1 cup fresh mushrooms

Autumn Pumpkin Chili image

Steps:

  • In a large skillet, saute onion and the green and yellow peppers in oil until tender. Add garlic; cook 1 minute longer. Crumble turkey into skillet. Cook over medium heat until meat is no longer pink., Transfer to a 3-qt. slow cooker. Stir in the pumpkin, tomatoes, chili powder, salt and pepper. Cover and cook on low for 7-9 hours. If desired, serve with toppings.

1 small sweet yellow pepper, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 pound ground turkey
1 can (15 ounces) solid-pack pumpkin
1 can (14-1/2 ounces) diced tomatoes, undrained
4-1/2 teaspoons chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
Optional toppings: Shredded cheddar cheese, sour cream, corn chips and sliced green onions

AROMATIC PUMPKIN CHILI

This recipe came about because I was craving a "different" kind of chili. Pumpkin immediately came to my mind. The smell that filled my house while simmering was amazing! This chili was thick and creamy, not much color but delicious!

Aromatic Pumpkin Chili image

Steps:

  • Brown meat and onion together. Add meat and onion to large pot with black beans after they have finished soaking and have been drained and rinsed. Add remaining ingredients except cilantro.
  • Cover and simmer for 2-3 hours on low heat, maintain a light bubbling and simmer until black beans are soft. Stir occasionally. Adjust the seasonings to your liking.
  • Garnish with cilantro and serve with tortilla chips.

1 (14 1/2 ounce) can petite diced tomatoes
1 lb ground bison meat (or whatever meat you prefer)
1 cup chopped onion
1/2 teaspoon garlic powder

1 1/2 teaspoons chili powder (add more for more heat)
1/4 teaspoon cayenne (add more for more heat)
1/8 teaspoon nutmeg
