- Blend 5 cups of any chopped fruit (we used strawberries, cantaloupe, pineapple, honeydew, watermelon and mango) with 3 cups water, 1/2 cup sugar and 2 tablespoons lime juice. Add more sugar and/or lime juice to taste and serve over ice.
ARRAYAN AGUA FRESCA
Arrayan, also called satre guavas are small, tart guavas with a seed in the middle. I have had a hard time finding recipes with them so I created this, and it turned out great.

Steps:
- Add water, sugar and arrayan to a pot on medium heat. Stir so that sugar dissolves.
- Cover and bring to a boil. Then reduce heat to low and let simmer until fruit cracks open and the water turns yellow, about 25 minutes.
- Transfer to a stainless steel bowl and use a stand or hand mixer on medium to separate the fruit from seed. (A food processor will not work because of all the seeds.).
- Place a sieve in a large bowl and pour mixture through, using a spatula to get all the juice out.
- Discard seeds.
- Cover and refrigerate for at least 2 hours. Pour into a pitcher with ice and serve with lime or mint as desired.

WATERMELON OR CANTALOUPE AGUA FRESCA
Agua fresca is a light fruit drink popular throughout Mexico. It's simply made by blending fruit with water, a bit of sugar and a little lime juice. Begin with sweet, juicy melon, or your agua fresca won't have much flavor.

- Blend together the watermelon or cantaloupe with 1 1/2 cups of the water, the lime juice and the sugar at high speed until smooth. Strain through a medium strainer into a large pitcher or bowl. Stir in the remaining water. Refrigerate for 1 hour or longer. Fill a glass with ice, pour in the agua fresca, garnish with a mint sprig, and serve.

- In a blender, combine fruit, sugar, lime juice, and 1 cup water. Puree until smooth. Pour through a fine mesh sieve into a pitcher, using a rubber spatula or wooden spoon to help push liquid through sieve.
- Discard fruit pulp, add 1 more cup water to pitcher, stir to combine, and chill in refrigerator until ready to serve.
