ASIAN COLESLAW

Here's an Asian slaw recipe without all the greasy mayonnaise. It's well-liked by the people who've tried it. A bit of sugar mellows the tangy Asian coleslaw dressing. -Alta Goodman of Canton, South Dakota

Steps:

  • In a large bowl, combine the cabbage, carrots, green onions and cilantro. In a small bowl, whisk together the remaining ingredients. Pour over cabbage mixture and toss to coat. Cover and refrigerate for 1 hour or until chilled.

  • In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing. You can save some of the dressing to dress noodles that can be added to this dish along with stir fried pork to make an entire meal.

1 (3-inch) piece ginger, grated fine

1 lime, juiced

1/2 cup peanut butter
1 head Napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
2 serrano chiles, minced fine
1 large carrot, grated fine with a peeler
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chiffonade cilantro
2 tablespoons chiffonade mint
1/2 teaspoon ground black pepper

Steps:

  • Whisk together the lime juice, vinegar, chili oil, mayonnaise and soy sauce in a large bowl. Add the cabbage, peppers, snow peas and scallions and toss to combine. Season with salt and pepper, to taste. Refrigerate for at least 30 minutes to allow flavors to meld.

Steps:

  • Put the cabbage in a large bowl. Toss with the scallions and ginger.
  • Put the sesame seeds in a dry skillet over medium-high heat and toast until golden, about three minutes. Remove from heat; set aside.
  • Mix the vinegar, soy sauce and sesame oil together. Pour the dressing over the cabbage and toss gently. Add the coriander leaves and red pepper flakes and toss again.
  • Transfer to a serving bowl and sprinkle with the toasted sesame seeds. The salad is ready to serve, but it can wait, at room temperature, an hour or two before serving.

6 cups shredded Chinese cabbage (about 1 medium-size head)
1/4 cup finely minced scallions
1 tablespoon finely slivered fresh ginger
2 tablespoons sesame seeds
1/3 cup rice vinegar

  • In a large bowl combine cucumber and pea pods. For dressing, in a small bowl stir together vinegar, salad oil, sesame oil, sugar, salt, and crushed red pepper. Pour dressing over cucumber and pea pods, stirring to coat. Cover and chill for at least 4 hours or up to 24 hours.
  • Stir Chinese cabbage into cucumber mixture. Sprinkle with nuts. Makes 8 servings.

1 medium cucumber, halved lengthwise and thinly sliced
1 cup snow peas, cut up
1/4 cup rice vinegar
1 tablespoon salad oil
2 teaspoons toasted sesame oil
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
4 cups Chinese cabbage, shredded (Napa cabbage)
1/2 cup honey-roasted peanuts or 1/2 cup dry roasted peanuts, coarsely chopped

ASIAN NAPA SLAW

I came up with this recipe as an alternative to regular coleslaw. It has some of my favorite spices (cardamom, cumin, coriander and ginger) as well as a nice crunch from the pistachios and the sprouts. It has become one of my signature salads and is often requested at summer BBQs. I promise it will become one of your favorites too.

Steps:

  • Shred the cabbage, discarding the tough outer leaves. Put cabbage into a large bowl.
  • Add the peppers, scallions and sprouts, mix to combine.
  • In a smaller bowl, combine the mayonnaise and honey. Mix well, until it is blended and creamy. Add the lime juice and mix.
  • Using a mortar and pestle or a spice grinder grind together the coriander seeds, green peppercorns and the cumin seeds.
  • Once those are ground, add the cardamom, ginger and red pepper flakes. Grind all the spices together until they form an even textured powder.
  • Add this to the mayonnaise mixture and blend well.
  • Drizzle this over the cabbage, peppers and sprouts. Mix to ensure that all the cabbage is coated. The easiest way to do this is to use your hands.
  • Add the cilantro and the pistachios and toss well.
  • Season with salt and pepper.
  • Let chill for at least 30 minutes. The volume of the salad will be reduced but it will still be delicious!

The TORONTO STAR'S Marion Kane comes up with another good one "tweaked" from Chef Ming Tsai's repertoire. She suggests it as "a main course salad topped with strips of grilled or roasted chicken or steak that has been basted with teriyaki, hoisin, oyster or soy sauce." I enjoyed it on its own.
