ASIAN SEA BASS STEAMED IN BANANA LEAF

You can find banana leaves at Asian markets. Mine comes frozen and all I have to do is pull it out of the freezer and run them under warm water and they are ready to go. It lets the steam in while keeping all the ingredients inside to create a most flavorful fish

Steps:

  • 1. Place a sea bass filet on a piece of banana leaf cut big enough to fold around each filet.
  • 2. Divide up all the ingredients except the shredded green parts of the green onion and place on top of the fish. Fold the banana leaf around the fish and secure with a toothpick
  • 3. Place the banana leaf package in bamboo steamer over hot boiling water. Let the packages steam for about 15 to 20 minutes depending on how thick your fish is.
  • 4. Once done open them up and toss the shredded green parts of green onions for garnish

4 sea bass fillets
2 Tbsp ginger grated
2 Tbsp soy sauce
4 clove garlic minced
4 green onions white and light green parts sliced. green parts shredded
8 oz shiitake mushrooms stemmed and cut in chunky pieces
1 Tbsp sesame oil
1 large mild red chili deseeded and finely chopped
4 banana leaves

Banana Leaf Wrapped Bass with Scallion-Ginger Fried Rice image

Steps:

  • Add water to a medium pot, fitted with a steamer insert, and bring to a boil.
  • Coat a large wok heavily with 2 tablespoons grapeseed oil and heat until the oil is almost smoking. Meanwhile, season the eggs with salt and pepper. Add the eggs to the heated oil and stir vigorously until puffed and cooked through, about 2 minutes. Remove from the wok and set aside in a bowl. To the same wok, add another 2 tablespoons grapeseed oil and heat until hot, then add the garlic, 2 tablespoons scallions and 1 tablespoon ginger and saute for 1 minute. Add the rice and eggs back in, mixing gently. Season with the tamari and sesame oil. Mix well to combine. Remove from the heat and let cool slightly.
  • Lay a banana leaf on your work surface. Place about 1/4 cup cooled rice in the middle. Sprinkle a piece of fish on both sides with salt and pepper and place on top of the rice. Top with a few Thai basil sprigs. Fold the banana leaf and wrap tightly, similar to wrapping a sandwich in foil or plastic wrap. Repeat with the remaining fish. Carefully place each piece of wrapped fish in a steamer insert, seam-side down. Add the tea leaves to the simmering water and set the filled steamer insert over the water and cover. Steam until the fish is cooked through, about 12 minutes.
  • Meanwhile, when is the fish has about 3 minutes left, heat the olive oil in a small saucepan.
  • Cut the fish packets open with scissors, then top each pieces of fish with the remaining 2 tablespoons scallions and tablespoon ginger. Spoon the hot olive oil over the top of each piece of fish and serve.

Grapeseed oil, for cooking

Halibut or Other Fish Steamed in Banana Leaves image

Steps:

  • Put at least 2 inches of water in the bottom of a steamer. Soak the banana leaves in hot water until soft, just a few seconds.
  • Toss together the fish, garlic, ginger, nam pla, sugar, and cayenne. Put a piece of the seasoned fish in the center of each of the banana leaves and top with shallot, cilantro, and a light sprinkling of salt. Fold in the sides of the leaves and seal shut with toothpicks or skewers.
  • Steam for about 15 minutes, or until the fish is done (peek into one of the packages to check). Be careful of the steaming liquid when removing the packages. Remove each of the fish pieces from its package before serving and spoon some of the juices over it.
  • Lemongrass Halibut (or Other Fish) Steamed in Banana Leaves
  • In step 2, toss the fish with 1 teaspoon hot red pepper flakes, 2 tablespoons minced lemongrass, 1 teaspoon ground coriander, 1 tablespoon fresh lime juice, and the nam pla and sugar. Put it in the packages as directed and top with the shallots, 1/2 cup chopped fresh chives or scallion, and 1/2 cup fresh basil leaves, preferably Thai basil. Seal and steam as directed.

8 dried banana leaves, each about 8 inches square
1 1/2 to 2 pounds fillets of halibut, red snapper, grouper, or sea bass, cut into 8 pieces
1 teaspoon minced garlic
1 tablespoon peeled and minced fresh ginger
1 tablespoon nam pla
1 tablespoon sugar
1/2 teaspoon cayenne, or to taste
1/4 cup chopped shallot
1/2 cup roughly chopped fresh cilantro leaves

ASIAN STYLE SNAPPER/BREAM IN BANANA LEAVES

You can make this with snapper or bream and it works equally as well, I have made with both, last night I made it with bream. Banana leaves a great way to cook fish especially if cooking the fish on the BBQ, I cooked it in the oven last night. I served this with Asian style vegetables and I cooked 2 fish,of about 750g a piece to serve 4 or if your fish are smaller you can cook 4 individual fillets. Cooking times are based on my oven temperature, not a BBQ and you will have to adjust if doing them on the BBQ, mine gets very hot and cooks about 5-10 Min's quicker on the BBQ, if cooking on the BBQ, cook with a covered BBQ, using indirect heat.

Asian Style Snapper/Bream in Banana Leaves image

Steps:

  • Using tongs dip each banana leaf one by one into boiling water, remove immediately, rinse under cold water, dry thoroughly, leaves should be soft and pliable.
  • Cut each fish 3 times, place each fish on a leaf, top each fish with lemon grass and garlic.
  • Combine garlic, juice, sauces and oil, drizzle a little sauce over each fish reserving about 3-4 tablespoons for the vegeatbles.
  • Fold leaves over fish and secure with kitchen string. Place parcels in a pre-heated oven of 180 degress celsius and cook for 25-30 min's or until cooked through.
  • Alternativley which I love banana leaves for, cook on the BBQ, covered, using indirect heat for about 20-25 Min's. (I find it takes me 30 Min's in my oven and about 20 Min's on the BBQ, but I do have an extremely hot BBQ, I do not know how 4 smaller fish fillets affects the time as I have only cooked 2 larger fish.).
  • The banana leaves will get quite crispy and may even burn in places, they will stay quite moist underneath as the juices run from fish and sauce. For presentation purposes I keep 2 banana leaves to use as the base to serve fish on after.
  • Vegetables.
  • Heat olive oil in a wok or large pan, add garlic and ginger and stir fry until fragrant.
  • Add pepper, carrot and sesame oil, stir fry 2-3 Minutes, add both cabbages, peas, sprouts and reserved sauce. Stir fry until vegetables are just tender serve immediately with fish.
  • Extra sauce.
  • Just an optional extra if you prefer to have a little more sauce to drizzle over fish once served.
  • Combine the 3 ingredients in a small microwave safe bowl and microwave 30-45 seconds to just warm through.
  • To Serve: I place a banana leaf on a serving platter top with whole fish, I pour remaining juice and sauce from the bananan leaf fish was cooked in over fish, and arrange the vegetables around the fish, garnish with sliced onions.

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put half the ginger in the cavity of the fish, then lay it on foil. Pull the sides of the foil up around the fish to create a foil bowl, then add 1 tbsp water (this will steam the fish), seal and cook in the oven for 15-20 mins or a large bamboo steamer until the fish is flaking apart.
  • Transfer to a serving platter, leaving the juices in the foil. Heat the soy sauces, oil and palm sugar in a saucepan with 1 tbsp water until boiling and bubbling. Top the fish with the spring onion, chilli, most of the coriander and the rest of the ginger. Pour the hot liquid over the fish to 'cook' the aromatics on top. Scatter over any leftover coriander stalks to serve.

Steps:

  • Season sea bass with salt.
  • Place 1/3 of the spring onions and ginger onto a glass or ceramic plate; cover with sea bass. Scatter remaining spring onions and ginger over the sea bass.
