STIR-FRIED ASIAN VEGETABLES

As with most stir-fries I add and delete ingredients depending upon what I have on hand. This is a good basic veggie stir-fry from Cooking Light. Prep all of the ingredients before you start cooking because the cooking phase is quick.

Steps:

  • Combine first 5 ingredients in a small bowl; stir with a wire whisk until well-blended.
  • Set aside.
  • Heat oil in a wok or large nonstick skillet over high heat.
  • Add carrot, celery, and onion; stir-fry 2 minutes.
  • Add snow peas, corn, and mushrooms; stir-fry 2 minutes.
  • Add broth mixture; stir-fry 1 minute or until thick and bubbly.

  • Mix chicken with ground ginger, black pepper, garlic salt, and sesame oil in a bowl; cover and refrigerate for 30 minutes.
  • Bring a pot of salted water to a boil. Cook broccoli, bell pepper, and mushrooms in the boiling water until broccoli is just tender, about 3 minutes; drain.
  • Whisk cornstarch and 1/2 cup water together in bowl.

I found the basic recipe in Jan/Feb.2009 issue of "Simple & Delicious". The original recipe name was Ramen-Vegetable Beef Skillet, and it was submitted by Marlene MCallister of Portland, Michigan.But the reason I changed the name is, because I left out a few things and added a few of my own touches.If you are crunched for time, you might want to try a bag of store bought cole slaw for the cabbage and carrots. Steps:

  • Thinly slice the lemon grass (or lemon rind).
  • Peel and chop the ginger and garlic.
  • Heat the oil in a large wok style pan over high heat.
  • Add the lemon grass (or lemon rind), ginger and garlic and stir-fry for 30 seconds, or until brown.
  • Add the chicken and stir-fry for 2 minutes.
  • Then add the vegetables and stir-fry for 4 to 5 minutes, or until the chicken is cooked through and the vegetables are almost cooked.
  • Finally stir in the oyster sauce, a pinch of sugar and seasoning to taste and stir-fry doe another minute for flavors to blend.
  • Serve immediately, sprinkled with the crushed peanuts and freshly chopped cilantro leaves on top accompanied with cooked rice or Asian noodles.
  • Enjoy!
