LOW CARB LETTUCE BURGERS

- For the sauce: Mix together the yogurt, adobo sauce, mustard and Worcestershire sauce in a small bowl. Set aside.
- For the burgers: In a bowl, combine the ground chuck, salt, black pepper and Worcestershire sauce. Form four patties and set aside.
- Heat a skillet over medium-high heat. Cook the patties until done in the middle, 4 to 6 minutes per side.
- For the toppings: Cut the base of each lettuce leaf on the head and carefully peel it away so that it stays as intact as possible.
- Top the patties with avocado slices, tomato slices, red onion rings and chopped pickles, then drizzle with the sauce to taste. Use two or three lettuce leaves per patty and wrap them around the patty as tightly as you can. Slice in half and serve immediately!
BACON CHEESE FRITTATA
Here's a tasty little number that doesn't require any special ingredients. You'll feel like you're out for breakfast while cooking at home. I substituted sausage in place of bacon because it's what I had. Recipe from Taste of Home Quick Cooking July/August 1999, courtesy of Diana Bullock who likes to prepare this for overnight guests. She keeps cooked bacon in the freezer to cut down on preparation time.

- Heat olive oil and butter in a 9-inch nonstick pan over medium heat and cook asparagus, stirring occasionally, until soft but still firm to the bite, 10 to 15 minutes.

- In a 9- or 10-in. ovenproof skillet, cook bacon until crisp. Drain, reserving 1 Tbsp. drippings. Heat reserved drippings on medium-high. Add asparagus, onion and garlic; saute until onion is tender. Crumble bacon; set aside a third. - Position an oven rack in the upper part of the oven and preheat the broiler. Whisk the eggs, 3 tablespoons of the cheese, the milk, lemon zest, salt, and pepper to taste together in a bowl.
- Heat the olive oil in an 8-inch nonstick skillet over medium heat. Add the asparagus and Canadian bacon, and cook until the asparagus is crisp-tender, about 4 minutes. Reduce heat to low, pour the egg mixture into the skillet, stirring gently to distribute the fillings evenly. Cover, and cook until the bottom sets, but does not get too brown, about 9 minutes. Remove the cover, scatter the remaining 1 tablespoon of cheese over the surface. Run the frittata under the broiler until the top sets and browns slightly, about 1 minute. - Whisk eggs, 3 tablespoons of cheese, milk, lemon zest, 1 teaspoon salt, and pepper to taste together in a bowl. Set aside.
- Heat olive oil in an 8-inch nonstick skillet over medium heat. Add asparagus and bacon and saute until asparagus is tender but still slightly crisp, about 4 minutes. LOW CARB BIG BEEF BACON CHEESEBURGERS WITH SAUTEED MUSHROOMS

- Let meat rest to take the chill from the refrigerator.
- Preheat 2 nonstick skillets over medium high to high heat.
- Place the meat in a bowl and score it into 4 equal sections and form the meat into patties. Season each patty with grill seasoning. Pour a few tablespoons of Worcestershire sauce into a small dish and using a pastry brush, lightly baste the burgers with sauce. Drizzle a touch of oil into the 1 hot skillet and arrange the burgers. Do not move the meat for 2 minutes. Turn and sear the reverse side to caramelize the meat. Lower the heat slightly and cook 5 minutes longer on each side.
- Place bacon slices in the other skillet and cook for 3 minutes on each side, until crisp. Drain fat and reserve bacon. Return the skillet to the stove top. Add 2 tablespoons oil, the garlic and mushrooms to the pan. Thinly slice sage leaves, then add to the mushrooms and season with salt and pepper. Saute the garlic and mushrooms 5 minutes until just tender. Deglaze the pan with dry sherry and scrape up the pan drippings.
- Pile the mushrooms on top of burgers, then top with bacon and cheese and cover with lid or foil to melt cheese. Transfer burgers to dinner plates. Pass grainy mustard at the table.

- Add onions and salt, and cook, stirring occasionally until softened, about 3 minutes.
