Pork and Asparagus Sheet-Pan Dinner image

Steps:

  • Preheat oven to 425°. Line a 15x10x1-in. baking pan with foil; brush with 2 teaspoons olive oil., In a large bowl, toss potatoes with 1 tablespoon olive oil. Place in 1 section of prepared baking pan. In same bowl, toss asparagus with 1 tablespoon olive oil; place in another section of pan. Sprinkle salt and pepper over potatoes and asparagus., In same bowl, toss apple with 1 teaspoon olive oil. In a small bowl, mix brown sugar, cinnamon and ginger; sprinkle over apples and toss to coat. Transfer to a different section of pan., Brush pork chops with remaining 1 tablespoon olive oil; sprinkle both sides with Southwest seasoning. Place chops in remaining section of pan. Bake until a thermometer inserted in pork reads 145° and potatoes and apples are tender, 20-25 minutes. Let stand 5 minutes before serving.

1/4 cup olive oil, divided
3 cups diced new potatoes
3 cups cut fresh asparagus (1-inch pieces)
1/4 teaspoon salt
1/4 teaspoon pepper
1 large gala or Honeycrisp apple, peeled and cut into 1-inch wedges
2 teaspoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
4 boneless pork loin chops (1 inch thick and about 6 ounces each)
2 teaspoons Southwest seasoning

Sometimes when you're barbecuing, you want to get a little fancy-maybe to impress the neighbors or something like that. Hell, I've been there, believe me. And I can tell you from experience that stuffed tenderloin will get you that "wow" factor.

Steps:

  • Heat a smoker to 300°F.
  • Trim any excess fat and membrane from the pork tenderloin. Using a sharp knife with a very long, straight blade, insert the knife through the center of the tenderloin. Take care not to cut out to the sides-just insert the knife blade into the center and then remove it. Push a turkey baster through the cut, enlarging the opening; remove the baster.
  • Trim your smoked sausage link to the exact length of the tenderloin. Stuff it into the opening. Apply the rub thoroughly, coating the outside of the tenderloin. Place the tenderloin in a medium-size aluminum pan, and place the pan in the smoker. Cook for about 1 hour or until the internal temperature of the meat reaches 150°F.
  • While the meat is cooking, prepare the sauce: In a medium saucepan over medium heat, combine the vinegar sauce and the apple jelly. Stir thoroughly to combine. Make sure the sauce thins out as it heats, about 5 minutes. Then lower the heat and keep it warm until you're ready to use it.
  • During the last 15 minutes of cooking time, apply half of the sauce to the meat and put the meat back in the smoker. Reserve the remaining sauce.
  • Remove the pan from the smoker. Allow the meat to sit, loosely covered, for 10 minutes. Then cut it into slices about 1/4 to 1/2 inch thick, and serve with the remaining sauce.

1 pound smoked sausage (a large link)
3 cups Jack's Old South Original Rub, or 1 recipe Basic Barbecue Rub (page 20)
3 1/2 cups Jack's Old South Vinegar Sauce, or 1 recipe Basic Vinegar Sauce (page 22)
2 cups apple jelly

Honey Dijon Pork Tenderloin with Asparagus image

Steps:

  • Preheat oven to 400°F. Place Reynolds® Oven Bag in 13x9x2-inch baking pan.
  • Add corn starch, honey, mustard, Worcestershire sauce, salt and pepper to oven bag. Squeeze bag to mix ingredients.
  • Slice pork tenderloin 1-inch thick. Place pork and asparagus in bag. Turn bag several times to coat pork and asparagus with sauce. Place ingredients in an even layer.
  • Close bag with nylon tie. Cut six 1/2-inch slits in top. Tuck ends of bag in pan.
  • Bake 12 to 14 minutes or until pork reads 145°F on thermometer. Let stand 5 minutes. Carefully cut bag open and serve. Garnish if desired.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 1 teaspoon olive oil in a skillet over medium heat; cook and stir mushrooms, shallot, thyme, garlic powder, sage, black pepper, and salt in the hot oil until liquid has evaporated and mushrooms and shallots are softened, 5 to 10 minutes. Add parsley; cook and stir for 1 minute. Mix in spinach; cook and stir until spinach is wilted, about 5 minutes. Stir in mustard. Remove from heat.
  • Place pork tenderloin on a work surface; lay prosciutto atop tenderloin. Spread mushroom-spinach mixture over prosciutto, leaving 1/2-inch border on all sides. Tightly roll tenderloin around the filling and tie together with kitchen string to keep closed.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat; place rolled tenderloin in the hot oil. Sear until all sides are golden brown, about 10 minutes. Transfer seared tenderloin to a 9x13-inch casserole dish.
  • Bake in the preheated oven until pork is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

  • Make a lengthwise slit about three-fourths of the way through tenderloin; open tenderloin so it lies flat.   • If you are using the large tenderloin from Costco, cut it almost in half, then cut the halves almost in half again so that you kind of unfold it a few times and try to pound it out flat to about 1/2" thickness or slightly thinner. (If you are using a smaller pork tenderloin, cut almost in half and pound it flat).
  • Once the tenderloin is flat and has a good surface area, spread the cream cheese all over the top. Lay the roasted red peppers over the cream cheese then sprinkle on the crumbled bacon. Evenly sprinkle on the packages dried pesto seasoning and lay the spinach leaves all over the top.
  • Roll the pork up (like you would if you were making cinnamon rolls) and tie it shut with 3 or 4 pieces of kitchen twine if needed. Next, rub olive oil, paprika, salt and pepper all over the pork and place in a greased baking sheet. Bake at 350-degrees about 60-90 minutes or until pork is cooked through. Once cooked, slice and serve!
  • **This makes quite a lot. After rolling, but before baking, cut it into thirds or fourths. Wrap in plastic wrap and freeze!
