AUNT MARGARET'S SWEET POTATO CASSEROLE

My great-aunt made an incredible sweet potato casserole for our holiday dinners. I've lightened it up a bit, but we love it just the same. -Beth Britton, Fairlawn, Ohio

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Meanwhile, make topping by combining flour, brown sugar, oats and salt; cut in butter until crumbly. , Drain potatoes; return to pan. Beat until mashed. Add sugar, milk, eggs, butter and vanilla; mash. Transfer to a broiler-safe 13x9-in. baking dish. Sprinkle topping over potato mixture. , Bake, uncovered, until topping is golden brown, 40-45 minutes; let stand 10 minutes. Sprinkle with marshmallows. If desired, broil 4-5 inches from heat until marshmallows are puffed and golden, 30-45 seconds.

3 pounds sweet potatoes (about 3 large), peeled and cubed

1/2 cup 2% milk
2 large eggs, lightly beaten
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix sugar, butter, egg, cinnamon, salt, and nutmeg together in a bowl. Stir in sweet potatoes, orange zest, and orange juice until evenly incorporated. Pour mixture into a shallow 9x13-inch baking dish.
  • Bake in the preheated oven until cooked through and bubbling, 1 hour. Serve hot or cold.

I detested this stuff growing up...it was bland sometimes bitter & always the dish that MANY at my family gatherings would pass on over the years. Some years ago I became intrigued by wanting to make this traditional holiday fare into something that would be scrumptious to taste and be eaten up, so I worked and experimented. Finally I came up with this recipe. My family really LOVES it and often friends and family go back for 2nd and 3rd helpings. Without further ado.. here is Sweet Potato/Yam casserole.

Aunt Robyn's Simple Sweet Potato Casserole image

Steps:

  • Preheat oven at 400°F.
  • Take washed yams/sweet potatoes and wrap in foil.
  • Place wrapped yam/sweet potatoes in oven with seam of foil up.
  • Bake for 1 1/2 hours or till done.
  • Take foil off and let cool for 10 - 15 minutes.
  • Peel skin off of each potato, which comes off super easy, and put each potato in a large mixing bowl.
  • Add butter, cinnamon, vanilla, brown sugar to sweet potatoes and mix with an electric mixer. Make sure it is mixed well with no clumps.
  • Take mixture and add to a 2 1/2 quart or 13x9 bake dish which has been buttered or sprayed with cooking spray.
  • Spoon over the top the caramel sauce.
  • Return to oven at 375°F for 20 minutes
  • Cover top with mini marshmallows--enough to cover the whole top of dish. Return to oven for 10 more minutes. The marshmallows should be melted and crispy but not dark browned.
  • Take out and let sit for 10- 20 minutes.
  • Serve and enjoy.

Steps:

  • 1. Pre-heat oven to 350 degrees. Trim ends off sweet potatoes and cut in half and boil in a pan of lightly salted water until tender. Allow to cool and slide off skins and mash until smooth and creamy.
  • 2. Add butter, milk, cinnamon, and brown sugar into mashed sweet potatoes and Jack Daniels whiskey. Stir until well blended.
  • 3. Pour mixture into a well-greased 13"x9" baking dish. Place into a pre-heated oven for 30 minutes or until bubbly.
  • 4. Chop up pecans and place in a bowl. Mix in crushed cornflakes, brown sugar and softened butter. Mix until crumbly and sprinkle over the top of the potatoes. Put back into oven for 15 min. Cool and serve.

4-6 raw sweet potatoes
1 stick butter or margarine
1 c milk
1 tsp ground cinnamon
1/2 c brown sugar, firmly packed
1 Tbsp jack daniels whiskey
TOPPING
1 c pecans, in pieces
