Steps:
- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
LENTIL SLOPPY JOES

- Heat 1 tablespoon vegetable oil in a medium saucepan over medium-high heat. Add the onion, carrot, bell pepper and 2 tablespoons ketchup and cook, stirring occasionally, until the vegetables are slightly soft, about 3 minutes. Add the garlic and cook, stirring, 30 seconds. Add the lentils, oregano and 4 cups water; bring to a boil and cook 5 minutes, then reduce the heat to medium low and simmer until the lentils are tender and the water is absorbed, 35 to 40 minutes (add up to 1 more cup water if necessary). Season with salt and pepper.
- Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the beef and cook, breaking it up with a spoon, until it begins to brown, about 2 minutes. Add the Worcestershire sauce and the remaining 6 tablespoons ketchup and cook, stirring, until combined. Add the lentil mixture and 1 cup water and cook, stirring occasionally, until the lentils are soft and the mixture thickens, about 8 minutes. Season with salt and pepper.
- Fill the buns with the cheese and lentil mixture. Top with pickles and/or pickled jalapenos.

I used this recipe a great deal because it was so easy and good. It originally came from my grandma's 1950s recipe collection.

AUNTIE DEAREST SLOPPY JOES
Sloppy joes seems to be one of those foods that each family has their own special recipe. This is my sister's recipe. I like it because it is made from common ingredients that I always have in the kitchen and it can easily be changed. You want sweeter..add more sugar. You don't like peppers,leave them out. It is a simple basic recipe, play with it and make it your own individual recipe.

- Brown meat, pepper, onion and garlic in large skillet. Cook until no pink remains in meat and drain well.
- Stir all remaining ingredients except milk into meat mixture. Place over low heat and stir in milk. Cook until thickened. This will happen quickly so don't walk off and leave it cooking.
- Serve on toasted buns.

SLOPPY JOES
This is my adaptation of my mom's yummy sloppy joe recipe. I like to toast the buns, as they hold together a little better when they are toasty. I usually make a double batch, which gives us enough for dinner with leftovers for lunch. Times are estimated. Tip: my DH loves to add a slice of cheddar cheese before placing the bun top on. They are pretty tasty that way!

- In a large skillet over medium heat, brown beef until no longer any pink; drain.
- Add onions and garlic and cook until onions are transparent.
- Add remaining sauce ingredients and stir to combine. Bring to a simmer; reduce heat and simmer until thickened (about 15 minutes).
- Meanwhile, split buns and spread with butter. Place on a baking sheet and sprinkle with garlic and parmesan cheese. Place under broiler and broil until toasted golden brown. Set aside until sauce is done.
- Taste sauce and correct seasonings, if needed. Serve with toasted buns.
SLOPPY JOES

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.
