Steps:
- Heat up 3 tablespoons of olive oil to a saucepan.
- Add the pasta and saute until pasta turns a light golden brown, about 1 to 2 minutes.
- Turn off the heat and remove any excess oil by using a metal strainer. Set pasta aside allowing to cool down.
- Add tomatoes, garlic clove and a quart of an onion to a blender with enough water to start blending. For this recipe we will only be using about half of the puree mixture.
- Turn heat back up and slowly add in the puree mixture, mixing evenly with the pasta.
- Add 3 cups of water.
- Add Mi Arroz seasoning and tomato bouillon. You can substitute Mi Arroz with salt and garlic powder.
- Once your soup boils, taste the tomato broth: season with more salt, if necessary. Cover saucepan and reduce heat to low. Let soup simmer until all liquid has been absorbed, about 15 to 20 minutes. Your Ready to Serve and Enjoy.

- Place the meat in a large stock pot, and cook over medium-high heat until evenly brown. Drain the meat, except for about 2 tablespoons of the juices.
- Dissolve the bouillon cubes in 3 cups of hot water, and add to the stock pot with the meat. Stir in spicy vegetable juice cocktail, mixed vegetables, alphabet pasta, and 6 cups of water. Simmer 20 minutes, or until pasta is tender. Season to taste with salt and pepper, and serve.

HEALTHY ALPHABET SOUP
A delicious real alphabet soup which is much more nutritionally sound, as well as tastier, than the canned stuff. Recipe from "Stealth Health" Mar/99. In the ingredients, "Dried Italian herb seasoning is just regular dried Italian herb.

Steps:
- Combine first five ingredients; boil.
- Add next four ingredients; boil; reduce heat, cover and simmer stirring occasionally for 1 1/2 hours until beans are tender.
- Using a slotted spoon, remove most of the beans and transfer remaining liquid to a blender; process till smooth.
- Return mixture and beans back to the pot; Stir in alphabet pasta.
- Boil then reduce hear; cover and simmer 8 minutes until pasta is tender but firm.
- Yield: 6 1 1/2 cup servings.

QUICK AND EASY ALPHABET SOUP
I got this recipe in an email- I haven't tried it yet, but the idea of using a can of Spaghettios in it sounded interesting! The recipe says you can either use the spaghettios, alphabet soup, or just alphabet pasta- I'm pretty sure that each one will make three very different tasting versions of soup, so I guess I'll have to try it three times to see which one works best!

Steps:
- Heat oil in a saucepan over medium high heat.
- Add celery, onion and carrots, and saute until mixture is crisp tender.
- Add chicken and beef broths and bring to a boil.
- Stir in corn and peas and simmer for 1 or 2 minutes.
- Add can of spaghettios, or alphabet soup or pasta, and cook until soup is hot, stirring frequently.
- Serve with grilled ciabata bread or a grilled open face cheese sandwich, and enjoy!

- Heat the oil in a large soup pot over medium-high heat. When the oil is hot, but not smoking, add the pasta, stirring continuously. As you fry the pasta, it will change in color from a deep white to a deep brown. Take care not to burn it! You want to cook it until it smells toasty, but not bitter like burned toast, about 2 to 3 minutes.
- Pour the tomato puree over the pasta, sprinkle in the salt, and stir. Be careful, as the puree will want to jump all over your burners, it’s a good idea to cover it partially with a lid. Let the tomato base cook and thicken for about 6 minutes, stirring often, until it becomes a deeper red and has thickened to the consistency of a thick puree. Keep on stirring, so the pasta doesn’t stick to the bottom of the pot. You will see the base of the pot as you stir, but the sauce will not be dried out. Cooking the tomato puree to this point will give the soup a really nice depth of flavor.
- Pour in the broth, stir, and when it comes to a boil, reduce the heat to medium and simmer for another 10 minutes. Taste for seasoning and serve.

- Heat the olive oil over medium heat in a 5 quart (or larger) pot or dutch oven. Add the garlic, onion, Italian seasoning, salt, thyme, and pepper. Stir and cook for 5 minutes as the onion softens.
- Add broth, vegetables, potato, bay leaf, tomato paste, and diced tomatoes. Bring to a boil, then add uncooked pasta. Cover and simmer for 30 minutes. Remove bay leaf.
- Cover and store leftovers in the refrigerator for up to a week. To reheat, simply pour into a pot over medium heat and cook until warm. Feel free to add more broth to the leftovers as it cooks if it is too thick. (It thickens in the refrigerator as the potatoes and noodles soak up the liquid.)
