FRIED AVOCADO WEDGES WITH WASABI-LIME-MAYO DIPPING SAUCE

Crunchy outside, creamy inside, our fried avocado wedges are given a zesty edge with wasabi-lime dipping sauce.

Fried Avocado Wedges with Wasabi-Lime-Mayo Dipping Sauce image

Steps:

  • In 6-oz ramekin or other small dish, mix mayonnaise, wasabi powder and lime juice. Cover; refrigerate until ready to serve.
  • In deep 10-inch skillet, heat oil over medium-high heat to about 350°F.
  • Meanwhile, in 3 separate small shallow bowls, place flour, beaten egg and bread crumbs. Line large plate with kitchen towels.
  • Remove pit and peel from avocados. Cut each avocado into 6 wedges. Dip 1 wedge into flour to coat; tap off excess. Dip into beaten egg to coat, then coat with bread crumbs. Continue until all wedges are breaded.
  • In batches, carefully place breaded avocado wedges in hot oil. Fry 30 to 60 seconds on each side or until golden brown.
  • With slotted spoon, carefully remove fried wedges from skillet; place on towel-lined plate. Season with salt. Serve with dipping sauce.

1 1/2 cups vegetable or canola oil (or 2 inches oil in skillet)
1/2 cup Gold Medal™ all-purpose flour
1 egg, beaten
1 cup Progresso™ panko crispy bread crumbs
2 avocados
1/2 teaspoon kosher (coarse) salt

If you're trying to get the kiddos to eat "green things," give this recipe a try. I coat sliced avocado in ranch seasoning mix, followed by panko breadcrumbs for crunch, and then bake them up. I serve them with a creamy cilantro-lime sauce for dipping.

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the flour and ranch mix in a shallow dish. Whisk the eggs in another shallow dish. Stir together the panko, 1 teaspoon salt and 1/2 teaspoon pepper in a third shallow dish.
  • Cut the avocados in half and remove the pits. Cut each half in half again and remove the peel. Cut the quarters into thirds. (Each avocado will have 12 slices.)
  • Working one at a time, dredge the avocado slices in the flour mixture, followed by the eggs and then the panko. Place on the prepared baking sheet. Coat the avocado slices with cooking spray and bake, turning halfway through and coating with more cooking spray, until golden brown, 16 to 18 minutes.
  • Meanwhile, stir together the sour cream, mayonnaise, garlic powder, lime zest, lime juice and cilantro in a small bowl. Season with salt and pepper. Serve the sauce with the avocado fries.

2 large eggs
1 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
2 large ripe, firm avocados (about 8 ounces each)
Nonstick cooking spray, for the fries
One 8-ounce carton sour cream
1/4 cup mayonnaise
1/2 teaspoon garlic powder
1 teaspoon lime zest plus 1 tablespoon lime juice
2 tablespoons chopped fresh cilantro

  • In a bowl add bread crumbs, red chili powder, salt and mix well. In a separate bowl add all purpose flour, a pinch of salt, pepper powder and mix well. Keep the milk ready in a separate bowl.
  • Coat each avocado slice with flour mixture first then dip in the milk then on the bread crumbs mixture.
  • Arrange the avocado slices on a greased baking pan and drizzle oil on top of the avocado slices. Bake for 20 minutes until golden brown. Turn the avocado slices to the other side after 10 minutes. Crispy baked avocado slices are ready to serve.
