ITALIAN MEATLOAF WITH GARLIC HERB GLAZE

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, mozzarella, sundried tomatoes, Parmesan, parsley, basil, oregano, Worcestershire, eggs, onion, 1/4 cup of the ketchup, half of the garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands and mix together until combined well.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9-by-5-inches. Bake the meatloaf for 30 minutes.
- Meanwhile, stir together the vinegar, brown sugar, Italian seasoning, the remaining 1/4 cup ketchup and garlic in a small bowl. Brush the top and sides of the meatloaf all over with the garlic-herb glaze. Continue to bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- Preheat oven to 350 degrees F.
- Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.
- When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

This is an absolutely delicious meatloaf with a real gourmet taste. This is something that you can certainly serve to company or would be a welcome delivery to someone who is sick or in need as it has a real comfort food feeling. It is a slight modification of a recipe from Cooking Light.

- Preheat oven to 350 degrees.
- Combine the 1/2 cup ketchup, breadcrumbs, onion, basil, cheese, eggs, garlic, tomatoes, and ground beef and mix thoroughly with hands.
- Transfer meat mixture to a 9x5 inch metal loaf pan which has been sprayed with cooking spray.
- Spread 1/3 cup ketchup on the top of loaf.
- Bake @ 350 for 1 hour or until meat thermometer in center registers 160 degrees.
- Let stand for at least 10 minutes. This will allows meat juices to be retained and your meatloaf will then cut into beautiful slices that retain their shape. You can either slice it in the pan or remove entire loaf to a platter which is garnished with a few additional sprigs of basil for tableside presentation and slicing.

SPICY, GARLICKY MEATLOAF

- Heat oven to 350 degrees. In a large bowl, whisk eggs, garlic, scallions, jalapeño, sage, salt and black pepper.
- In a separate bowl, stir together bread crumbs and stock, cream or milk. Let stand five minutes.
- Add pork, beef and soaked bread crumbs to egg mixture. Knead ingredients together until just combined. Press mixture evenly into an 8- or 9-inch loaf pan. Bake for 55 minutes.
- Meanwhile, whisk together the tomato paste and olive oil. After meatloaf has finished baking, brush top with glaze; sprinkle with pine nuts, if using. Bake 15 minutes more (glaze will be thick and a meat thermometer should read 160 degrees). Let meatloaf rest for 10 minutes before slicing and serving.

SLOW COOKER ITALIAN MEATLOAF
This is an awesome recipe and very versitile. I also make up the meatloaf mixture and shape into meatballs. It makes about 3 dozen meatballs. I will freeze in 3 quart size ziploc bags and simmer a dozen or so in a sauce pan and spaghetti sauce when we want to have spaghetti with meatballs for dinner! Very Moist and flavorful

- Fold a 30" long piece of foil in half lengthwise. Place in the bottom of the slow cooker with both ends hanging over the top edges of the slow cooker.
- In a large bowl, combine all ingredients except 2 Tbls spaghetti sauce until well blended.
- Shape into a loaf. Place in a slow cooker on top of foil. Spread 2 Tbls of spaghetti sauce over top.
- Cover tightly and cook on high 2 1/2 to 3 hours or on low 5 to 6 hours.
- Use the ends of the foil to lift out meat loaf and transfer to a serving platter.

BEST EVER ITALIAN-STYLE MEATLOAF
This is the only meatloaf recipe I use. The cheese makes the meatloaf very moist and tasty! The herbs impart a wonderful flavor as well! I freeze this after slicing in a container and reheat in the microwave for a quick dinner.

- Preheat your oven to 350.
- In your food processor, pulse the onion, carrots, garlic, and horseradish until fine. Add to ground beef.
- Pulse the dry ingredients: croutons, chili powder, salt, & peppers, and add them to bowl with meat and veggies and mix.
- Mold into a loaf shape with your hands in a pan that has a lip and place in oven.

- Combine the tomato sauce and the balsamic vinegar.
