Steps:
- Heat oil in a large pot over medium-high heat. Add meat, flour, onion, and garlic; cook and stir until browned, 10 to 15 minutes.
- Add broth, tomatoes, potatoes, celery, and carrots, then stir in Creole seasoning and basil. Bring to a simmer. Reduce heat to maintain simmer and cook, uncovered, until potatoes are soft, meat is tender, and gravy is thick, about 1 hour.

OLD-FASHIONED BEEF STEW
This classic stick-to-your-ribs stew is the ideal project for a chilly weekend. Beef, onion, carrots, potatoes and red wine come together in cozy harmony. If you are feeding a crowd, good news: It doubles (or triples) beautifully.

Steps:
- Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
- Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
- Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.

BEEF CHUCK ROAST STEW (BABY FOOD)
My 1 year old loves this stew. I made this for her at about 10 months old. Easy to puree and freeze. One stop meal. Not bad for adults either - even without any seasoning. Just make sure your baby has been introduced to all the ingredients before serving. Servings are approximate. I calculated 3 cubes per serving - your little one might eat more or less depending on age. Add pasta or rice if you want to include a whole grain to the meal.

Steps:
- Trim excess fat off roast and cut into 1-1/2 inch cubes.
- Fill medium sauce pan with water, add meat, cover pan and simmer over medium/low heat for 40 minutes.
- While the meat is cooking, peel the carrots and slice. Peel the potato and cut into 1/2 inch cubes. Set aside.
- After the meat has been cooking for 40 minutes, add the carrots, onion, peas & potatoes. Cover and cook another 15 minutes or until vegetables are soft and meat is longer pink. If the water disipates before the vegetables are done, add more as needed.
- FOR INFANTS:.
- Separate the meat from vegetables. Using your food processor, puree the meat first to almost the desired consitency. Add the vegetables and puree until smooth or desired consistency.
- Scoop into ice cube tray and freeze. Once frozen, pop out and store in sealed plastic bag for up to 3 months.
- FOR OLDER BABIES:.
- Cut up meat to bite size pieces and serve veggies as-is. Freeze in indivual containers for easy one serving sizes.

- Cut the beef into 2 inch chunks. Then add olive oil into a Dutch oven pot. Bring the heat to high. Once the oil is smoking, add the beef chunks into the pot. Evenly brown each side of the beef chunks. Then remove from the pot.
- Place the chopped onion and minced garlic into the pot and stir over medium high heat until the onion becomes translucent.
- Then add 1/2 tsp thyme, 1/2 tsp oregano, 2 tsp paprika, 2 tsp salt , and 1/2 tsp black pepper. Stir and cook for about 2 minutes.

- 2. Heat the Dutch oven on high heat until super hot. While the pot is heating, toss the cubed meat in the flour, salt and pepper in a large bowl. In two batches, brown the floured meat cubes in the hot pan, using 2-3 tablespoons of oil per batch. Be sure to get really good color on the meat before stirring and removing from the pan.
- 3. When all the meat has been browned, drain the oil, return the meat to the pot and add the tomato paste. Cook over medium-high heat until the tomato paste has thickened up and started to toast. Add the entire bottle of wine, beef stock, diced onion, mushrooms, celery and garlic and stir well. Be sure to use a wooden spoon or spatula to scrape all that yummy goodness from the bottom of the pan once your liquids are in (that's where all the deep beefy flavors live!).
- 4. Tie the thyme and parsley stems in a tight bouquet with thread or non-waxed string and tie it securely. Throw it in the stew and stir it in along with the bay leaf. Bring the stew to a simmer and cover with the lid. Put the Dutch oven into the preheated oven and bake it for 1½ hours (if using a slow cooker, transfer the stew to into it now and set it for 3 hours).
