BABY LIMA BEANS AND SAUSAGE
Okay, so, when my husband and I got married everyone thought it'd be hilarious to get us a pig (think Varsity Blues), only instead of getting us a cute little potbelly pig, these guys went out to the country and bought a butcherin' hog. First few months, this pig was soooooo cute, it ate out of my hand, played with the dogs, we even took it to the dog park a time or two. However, six months into it, the pig was still growing... and growing... and growing. Bacon (that's what we named her) finally started tearing up our backyard, destroyed our air conditioning unit trying to get to the roots under it, pushed the dogs around so they didn't get any food (these are Great Danes, big dogs, by the way), tipped over the water basin daily and generally outgrew her surroundings. One day, I get home and... well, long story short, my husband had made a trip to Marvin's Meats and brought home about 300 lbs. worth of pork and there was no piggie to be found in my backyard. I wouldn't touch that meat for six months until our freezer got so bare there wasn't anything but the piggie meat. So, I tried not to think of my little pickle-eater while I cooked up ribs (so good!), butt roast (the best I've ever had) and pork chops (Marvin cut 'em real thick). And this recipe is what came of the last of the sausage and some dried beans in the cabinet.

Steps:
- Place 2 lbs. Lima's in 12 cups water. Bring to a soft boil and maintain for approximately 1 hour or until beans are mostly done but still a little crunchy. Throughout the cooking, add hot tap water to keep the beans covered and strain off any foam that appears.
- Fry bacon chunks until crispy and add bacon and grease to beans with boullion cubes.
- Cook beans the rest of the way.
- Cook sausage in a large skillet and add Frank's hot sauce and ground sage.
- Combine all ingredients and enjoy!

Steps:
- Shell the beans (if fresh) and wash thoroughly. Put 4 cups water and the salt in a medium saucepan and add the beans. Cook the beans until tender, about 30 minutes (if using frozen, cook about 10 minutes).
- Drain the liquid and stir in the butter. Sprinkle lightly with the pepper before serving.
REALLY DELICIOUS LIMA BEANS
Steps:
- In a skillet, heat the bacon over moderate heat. When partially rendered, add the olive oil. When the oil is hot add the onions, cover and cook for 15 minutes or until really tender. Add the garlic, tomato, tomato puree, and hot chili pepper and simmer, uncovered, for 5 minutes. Add the lima beans, cover and simmer for 15 minutes or until they have had a chance to absorb the flavors. Season to taste with salt and pepper and serve with grilled Italian sausages or breakfast sausages.

SLOW COOKER SOUTHERN LIMA BEANS AND HAM
I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

- Soak lima beans in 2 quarts of water in a large bowl for 8 hours or overnight. The next day, drain the lima beans and place into a slow cooker with onions, ham bone, and ham. Pour in 3 cups of water or as needed to cover. Place lid on the cooker, set to High, and cook for 3 hours.
- Stir in Cajun seasoning, black pepper, garlic salt, and cayenne pepper; set cooker to Low and cook until the beans and meat are very tender, about 4 more hours.

- In a Dutch oven, bring beans, water and salt to a boil. Remove from the heat; cover and let stand for 1 hour (or soak beans overnight). Do not drain. Bring beans to a boil. PARTON FAMILY BAKED LIMA BEANS & SAUSAGE

I love lima beans, so here's one we've adapted and hope to make. Time does not include overnight bean soaking.

Steps:
- Soak the beans in lots of water overnight, then drain, rinse, and pick out any bad ones.
- In a large pot, cover with cold water and add salt. Simmer covered over medium heat for 35 to 45 min until tender (make sure they don't get mushy). The amount of time it takes will depend on how large the beans are.
- Preheat oven to 350 degrees F.
- Drain and pour the cooked beans into a well-oiled baking dish.
- In a bowl, combine the remaining ingredients and stir to combine well. Add to the beans and fold it all together.
- Bake in a 350 degree F oven for 1 hour.
- Note: onions would also go well in this recipe.

- Separate the garlic into individual cloves; peel and slice them.
- In a large heavy-botomed frying pan, combine the garlic, oil and sage.
- Cook over low heat, stirring frequently, for 5 minutes, or until the garlic begins to turn golden.

- Add the beans, tomatoes and water.

GREEK MR. MANETTA'S BUTTER BEANS AND SAUSAGES ( DRY LIMA BEANS)
Tasty Lima Beans in tomato sauce. Leave out the sausage and make it vegetarian. Mr. Manetta explained his theory of why Greek food is so successfully seasoned. The best Greek cooks, he said, treat each major part of a dish separately, then combine it with other parts; they do not season the combined ingredients all at once. Butter beans is the other name for lima beans. There are two common varieties of lima bean - the baby lima bean and the Fordhook - but don't confuse them as the same bean in different stages of development. The Fordhook is larger, lighter in color, and has a stronger taste than the baby lima, but it is not a grown-up baby - it is a separate variety. In the south of the United States, Fordhook lima beans are commonly called butter beans. These larger beans are also known as butter beans in Europe, or Madagascar beans, since most lima beans sold in Europe are grown in Madagascar (or Mauritius). They can also be called calico beans, but that may be only when they're speckled with a bit of purple.

- In an oiled large, heavy frying pan, bake sausages in a 350°F oven, turning once, until lightly browned, 20 to 30 minutes. Remove and cut into 2-inch diagonal slices. Add enough oil to frying pan to make 3 tablespoons. Add onions and sauté until limp. Stir in remaining ingredients except ¼ cup of the parsley. Cover and simmer for about 45 minutes, stirring occasionally. Sprinkle with remaining parsley. Makes 4 to 5 servings.
- COOKED LIMAS. Put 1 ½ cups large dry lima beans, rinsed, into a large kettle. Add enough cold water to cover deeply. Heat to boiling; boil for 2 minutes; remove from heat, cover, and let stand for 1 hour. Drain, rinse, and cover with fresh salted water. Heat to boiling, then gently boil, uncovered, until beans are tender, about 45 minutes; drain.
- SUGGESTED ACCOMPANIMENTS: Cooked chard dressed with oil, vinegar, salt, and pepper served at room temperature. Large bread sticks or crusty bread. Full fruity red table wine, as a hearty California Zinfandel. Chilled fresh orange segments.
