BACON APPLE CRISP
Everything's better with bacon - and that includes apple crisp! The combination of smoky, salty bacon and tart, sweet apples works surprisingly well. This works out to be mainly sweet but with some lovely savory/salty undertones. I've tried this only with regular bacon, but I'm planning to experiment with hickory smoked. Prep time does not include cooking the bacon or peeling, coring and slicing the apples.

Steps:
- In a medium bowl, mix bacon, cheese, flour, oats and 1/3 cup of the brown sugar. Thoroughly mix in melted butter.
- Place apple slices in a 1.5- to 2-quart casserole. Toss with lemon juice, cinnamon and remaining 1/3 cup brown sugar.
- Spread topping on apples.
- Bake at 375 for 40-50 minutes, or until apples are tender. Allow to cool for at least 20-30 minutes before serving. Refrigerate leftovers.

I cooked apples that I stuffed with brown sugar and cinnamon over a campfire as a dessert for my family when we went camping. In the morning we had bacon with our breakfasts and the kids marinated the bacon in the leftover apples! The bacon was good but we ate the apples after and they where surprisingly good!

Steps:
- Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire. Alternatively, preheat an outdoor grill.
- Place apples in a loaf pan. Combine brown sugar and cinnamon in a bowl; spoon into each apple.
- Place the loaf pan into the campfire or on the grill; cook for about 3 minutes. Carefully remove the pan from the fire and sprinkle bacon over apples. Place in the fire or on the grill for about 5 minutes more.

- Preheat a 12 inch cast iron skillet on High heat. Add the bacon pieces for the crisp topping to the skillet and cook until crisp. Remove the cooked bacon and drain most of the bacon fat from the pan, reserving about 1 Tablespoon in the pan.
- Preheat your grill to 375 degrees F for two-zone cooking (this recipe will be using the indirect side of the heat), and fill your smoker box with apple chips. While your grill heats, start assembling ingredients for the crisp.
- In a large bowl, combine the ingredients for the apple filling. Stir gently to combine and pour into the skillet with the bacon fat.
- In another bowl, mix the dry ingredients for the apple crisp topping. Then stir in the cold butter pieces with a fork, pressing on the butter and mixing until the butter is in small pieces and the topping mixture resembles coarse sand. Sprinkle the mixture over the apples.
