- Mix 8 ounces softened cream cheese with 1 teaspoon Worcestershire sauce, 1/2 teaspoon grated lemon zest and 1 cup shredded firm cheese (like cheddar, parmesan, pepper jack or gouda); season with salt and pepper. With moistened hands, form into 1-inch balls, chill 4 hours, then roll in toppings. Here we used chopped pistachios, chives, tarragon, hulled pumpkin seeds, bacon with paprika, almonds, and black and white sesame seeds.

- In a large bowl, combine egg and soup mix. Crumble beef over mixture and mix well. Divide into 36 portions; set aside. In another large bowl, combine the flour and milk until smooth. Add cheese and bacon; mix well. , Shape cheese mixture into 36 balls. Shape one beef portion around each cheese ball. In a shallow bowl, beat eggs for coating. Place cracker crumbs in another bowl. Dip meatballs into eggs, then coat with crumbs. , Heat oil in a large cast-iron or other heavy skillet over medium heat. Cook meatballs until meat is no longer pink and coating is golden brown, 10-12 minutes.

- Preheat the oven to 350°F. Spread the pecans out on a baking sheet and toast for 7-10 minutes, just until fragrant, watching carefully. Allow to cool, then chop finely in a food processor or by hand. Remove and set aside. Clean food processor.
- Cut the cream cheese into cubes and add to the food processor bowl. Process until smooth, scraping the sides with a spatula.
- Add the cranberries and pulse just until the cranberries are slightly chopped. Add the blue cheese and pulse until just combined. If you process it too long the cheese mixture will take on an unappetizing blue tinge.
- Line a baking sheet with parchment paper. Dampen your fingers and roll balls of the cheese mixture about 3/4 to 1 inch in diameter. They should be small enough for a single bite. Roll in the chopped pecans and place on the parchment paper. Chill in the refrigerator for about 2 hours.
