BACON, ONION AND CHEESE STUFFED BURGER
Steps:
- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
BACON-WRAPPED PICKLES
You can pretty much wrap anything in bacon, including pickles! These are perfect for game day or any time of year. Thick-cut bacon doesn't work as well for these, so use the thinner slices. Serve with ranch or blue cheese dressing. These are also tasty dipped in Buffalo sauce.

- Pat pickles dry with a paper towel. Cut cream cheese into 8 strips. Place 1 strip onto each pickle, and wrap with a strip of bacon, securing ends with toothpicks if necessary. Place pickles on the baking sheet.

- Preheat the oven to 350˚F (180˚C).
- In a large bowl, mix the ground beef, eggs, bread crumbs, salt, pepper, and garlic powder. Mix until well combined.
- Put the mixture in a medium baking tray lined with aluminum foil and distribute the meat mixture evenly.
- Add the ham, cheese, and spinach on top of the meat.
- Carefully lift the meat and form a roll.
- In another aluminum-lined baking tray, place the slices of bacon side by side, one next to the other. Place the meat roll on top of the bacon.
- Roll up the meat with the bacon, then wrap with foil.
- Bake the aluminum-wrapped roll for 25 minutes.
- Increase the temperature to 500˚F (260˚C). Remove the foil and bake for 20 more minutes until the bacon is golden brown and crispy.
- Cool for 5 minutes, then slice and serve.

- Preheat a grill for high heat.
- In a large bowl, mix together the Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce, salt and pepper. Crumble in the ground beef, and mix together by hand. Form into 6 patties, and wrap a slice of bacon around each one. Secure bacon with toothpicks.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Remove toothpicks before serving on hamburger buns.

STATE FAIR FRIED PICKLE BURGER

- 1. Heat 2 inches of vegetable oil in a deep, heavy pan until oil reaches a temperature of 350 degrees F.
- 2. Combine flour, baking powder and garlic powder in a shallow bowl. Beat egg in separate bowl.
- 3. When oil comes up to temperature, dip Vlasic® Ovals Hamburger Dill Chips in egg and then in flour mixture and add to oil. Cook until golden brown, flipping over while cooking, about 2 minutes.
- 4. Set aside on a paper towel to drain.
- 5. Heat 2 teaspoons vegetable oil into a separate cast iron or fry pan and heat until oil shimmers. Add burger to pan.
- 6. While burger is cooking, add bun, cut side down, to fry pan. Heat until grilled, 2 to 3 minutes, then remove.
- 7. Cook burger to desired doneness and turn off heat. Lay American cheese on burger and cover pan until melted.
- 8. On bottom of bun, layer lettuce, tomato and burger. Top with ranch dressing, fried pickles and top of bun.
- 9. Serve additional fried pickles on the side.
SPECIAL BACON WRAPPED BURGERS
This is one of the best burgers I've ever had! I must give credit to my co-worker Allen for the basic recipe.....he grilled them for a casual dinner party and I pestered him for hours to get the 'secret'. I've now perfected my own version and frequently serve them up fully dressed and folded into large lettuce leaves for a fun low-carb meal.

- Fire up the grill (adding a little hickory to the coals adds some extra flavor).
- Mix raw beef, chopped onion, barbeque sauce and salt/pepper until thoroughly blended. (*Option if you have kids who will not eat visible onion is to mince the onion in a food processor rather than chopping. They will never know!).
- Form 4 large, thick 1/3 lb burgers.
- Wrap each burger's circumference with a strip of uncooked bacon and secure with a couple of toothpicks. (*Option if you prefer crisp bacon is to precook the bacon to about half done, let it cool slightly and then wrap each burger. With this method, the bacon is somewhat shrunk so two slices may be needed to surround each burger. It's a little messier prep, but the bacon ends up nice and crisp by the time the burgers are fully cooked.).
- Once wrapped you can flatten them out a little bit with the palm of your hand. The bacon will 'stretch' to accomodate the sirloin mixture.
- Sprinkle each side with your favorite grilling spices.
- Grill 10 minutes or so on each side or just until center is perfectly pink. (*I also get great results broiling in an iron skillet. Just be sure to place your rack on the highest setting and preheat both the oven and the skillet at 500 degrees before switching over to 'broil' and adding the burgers to the hot skillet. This way, you should not even have to flip the burgers -- juicy and delicious!).
- Dress as you like and enjoy! (Don't forget to remove the toothpicks!).

- Line a microwave-safe plate with paper towels. Arrange six of the bacon slices in a single layer; cover with paper towels. Microwave on 100 percent power (high) for 1 to 2 minutes or until partially cooked. Drain on paper towels; cool. Transfer to a large resealable plastic bag. In a small bowl stir together brown sugar, coffee, and garlic powder. Add mixture to the bag. Seal bag; shake to coat bacon. Set aside. Repeat with remaining bacon and remaining brown sugar mixture.

- For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place patties on grill rack over drip pan. Cover and grill for 16 to 18 minutes or until done (160 degrees F to 165 degrees F)* and bacon is crisp. (For a gas grill, preheat grill. Reduce heat to medium. Adjust heat for indirect cooking. Cover and grill as above.).
- TO FINISH.
- Place burgers on bun bottoms. Top each patty with coleslaw and Fried Pickles. Add bun tops.
