Animal-Style Skillet Potatoes #SP5 image

Steps:

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. Once the bottom sides have started to brown, reduce the heat to low and continue cooking, stirring occasionally, until the onions are thoroughly browned, about 20 minutes.
  • After the onions have been cooking for about 15 minutes, start cooking the potatoes. Heat remaining 2 tablespoons oil in a separate skillet over medium heat for 1-2 minutes. Add potatoes and cook, covered, until the potatoes are easily pierced with a fork, about 15 minutes. Stir occasionally.
  • Stir the Thousand Island dressing into the potatoes and stir gently to coat. Tear each slice of cheese into four pieces and place on top of the potatoes. Place the lid on the skillet and cook 1-2 minutes, until the cheese has melted.
  • Top with caramelized onions and serve.

Steps:

  • Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
  • Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
  • Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.
  • Add the bacon wrapped potatoes back in the oven for 30 minutes. Turn them over after the first 15 minutes.
  • Mean while, in a small serving dish spoon in the sour cream, hot sauce and minced parsley. Remove the bacon wrapped potato bites and serve.

1 (24 ounce) package Simply Potatoes Red Potato Wedges
6 slices bacon
3 tablespoons sour cream
3 teaspoons hot sauce
2 tablespoons flat leaf parsley

These are the best Duchess potatoes you will ever have, I developed this recipe, you will love these! They are a must with prime rib roast or roast pork dinner! Use only russet potatoes for this, and only butter not margarine! If you do not have a pastry bag, just drop 12 mounds onto baking sheet and swirl with a spoon to create a desired pattern.

Delicious Duchess Potatoes image

Steps:

  • Cook the potatoes in boiling water until fork-tender (about 25 minutes) drain and place in a large mixing bowl.
  • Cool the potatoes for about 20 minutes at room temperature.
  • Add in eggs and 7 tablespoons melted butter, pinch dill, pinch garlic powder, salt, pepper and parmesan cheese; add in 3 tablespoons cream adding in more to achieve desired consistency (you might use up to 7 tablespoons cream).
  • Season with more salt and pepper if needed to taste.
  • Spoon the potato mixture into a pastry bag fitted with a large star tip.
  • Pipe the mixture into 12 mounds onto a large greased baking sheet/s.
  • Melt the 1/3-1/2 cup butter and drizzle over the potatoes.
  • Sprinkle a very small amount of paprika over each mound (this is only optional).
  • Set oven to 400°F.
  • Bake for about 18-20 minutes or until golden brown.
  • Delicious!

Steps:

  • Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. Drain on paper towels; pat to remove excess grease.
  • Using a 24-cup, non-stick mini muffin pan, line bottom and sides of each mini muffin cup with a half strip of the par-cooked bacon in a circular fashion, making a well in the center, folding or creasing if needed to fit.
  • In a large mixing bowl, beat potatoes, eggs, and 1/2 cup of the cheese with an electric mixer on medium-high speed until smooth and fluffy.
  • Transfer potato mixture to a large pastry bag fitted with a large star tip. Pipe potato filling evenly into bacon-lined muffin cups in a spiral fashion (cups will be full and potato spirals will extend beyond the height of muffin cups). Sprinkle tops with remaining 1/4 cup cheese. Bake for 12-15 minutes or until tops are golden brown. Let rest 5 minutes. Run knife around edges to remove from pan. Place on serving platter and garnish with chives. Serve warm. Makes 24.
  • Note: A plastic freezer bag can be used in place of a pastry bag and decorator's tip. Fill freezer bag with potato mixture and seal. Using kitchen scissors, cut off a small corner of the bag, about 1/2 inch, and pipe potato mixture into mini muffin cups as directed.

  • Scrub with a vegetable brush.
  • Pat dry with paper towels.
  • Cut potatoes in half lengthwise.

Steps:

  • Preheat oven to 400F degrees. Coat baking sheet with cooking spray.
  • In large pot, add potatoes and enough water to cover them. Bring to a boil. Reduce heat to medium, and cook 10 minutes, or until soft. Drain.
  • Mash until smooth (I like using my mixer to do this). Stir in butter and sour cream. Add egg yolks and chives. Season to taste with salt and pepper.
  • Scoop potatoes into a pastry bag fitted with a star tip. Pipe 8 swirled ovals into the prepared baking sheet.
  • This can be refrigerated at this point until ready to bake.
  • Bake 25-30 minutes, or untl the edges start to brown.

Steps:

  • Cut potatoes into 2 inch chunks. Place in saucepan, cover with water and stir in 2 teaspoon salt. Bring to a boil over high heat, turn down to a simmer and cook for 15 to 20 minutes, until the potatoes are tender.
  • Drain potatoes, return to saucepan. Mash potatoes by hand to a coarse texture. Turn heat to low, stir milk and butter. Fold in cheese and chives and add salt and pepper to taste.
