CREAMY GOAT CHEESE, BACON AND DATE DIP
This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

Steps:
- Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
- Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
- Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

BACON WRAPPED DATES WITH ALMONDS
Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

BACON WRAPPED DATES WITH ALMONDS AND GOAT CHEESE
Another great Saveur recipe. The already sweet dates caramelize in the oven, inbued with the smoky goodness of the bacon..then you bite into it-it's soft, and gooey, giving way to a even gooier ,creamy center and then you get a surprising little crunch from the salty almond.MMMMM.... These went over well at my B-day even among those that claimed to dislike goat cheese.(suggestions were made about subbing cream cheese, but I didn't hear any complaints;)The goat cheese really isn't overpowering;it's tangy creaminess is what harmonizes the sweet and savory flavors.I just wish I could eat these more often !

Steps:
- Preheat oven to 500°F.
- Meanwhile, pit the dates carefully. You may cut a small slit in each date(easier than pitting from the stem end),being careful to keep the dates intact.Place a small amount of goat cheese into each date. You may use a small spoon or pastry bag,Place one almond into each date.Cut each slice of bacon in half crosswise.wrap one piece of bacon around each date, securing with a toothpick.
- Place dates about 1/2 inch apart on a baking sheet, seam sides down.Bake 6-8 minutes. The bacon should be crispy and the juices from the dates bubbling.Be careful not to burn the dates!
- Remove from oven and let cool.(Very important!these are great warm but if you pop one in your mouth strait out of the oven the goat cheese will burn your mouth like hot lava.Seriously, let these cool a little.).

I watch Ted make these on Queer Eye for the Straight Guy tonight. Sweetpea has a similar recipes posted but they aren't stuffed. A nice balance of sweet and salt.
