CRISPY BACON WRAPPED DATES WITH LEMON-BASIL CREMA

Steps:
- For the crema: Whisk together the sour cream, mascarpone, lemon zest, lemon juice, basil and salt. Cover, and refrigerate for at least 1 hour to let the flavors marry.
- For the dates: Preheat the oven to 400 degrees F.
- Make a small lengthwise slit down the center of each date. Remove the pits and open the dates slightly; make sure they stay intact. Stuff each date with 1 teaspoon of the sausage. Close the dates up and around the sausage¿they won't close completely¿leaving some of the sausage exposed. Wrap each date in a piece of bacon and place on a baking sheet.
- Bake for 8 minutes. Flip the dates, and bake until the bacon is crisp, another 8 to 10 minutes. Serve warm, with the crema on the side.

- Preheat the oven to 400 degrees F.
- Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.
- Place the bacon-wrapped dates on a baking sheet. Bake until the bacon is crisp, 15 to 20 minutes.

Another great Saveur recipe.The already sweet dates caramelize in the oven,inbued with the smoky goodness of the bacon..then you bite into it-it's soft,and gooey,giving way to a even gooier ,creamy center and then you get a surprising little crunch from the salty almond.MMMMM.... These went over well at my B-day even among those that claimed to dislike goat cheese.(suggestions were made about subbing cream cheese,but I didn't hear any complaints;)The goat cheese really isn't overpowering;it's tangy creaminess is what harmonizes the sweet and savory flavors.I just wish I could eat these more often !
