BACON WRAPPED DATES STUFFED WITH MANCHEGO
Steps:
- Preheat the oven to 400 degrees F.
- Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
- Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.

- Preheat the oven to 375 degrees F (190 degrees C).
- Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.
- Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

Sinfully delicious!! Salty and sweet, crispy and gooey!! Yum! Surprisingly easy and look fantastic. I had these at a restaurant and then went on a hunt to find a similar recipe. Found one online and tweaked it some. If you use thick cut bacon, par-cook it some before wrapping dates.

Steps:
- Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
- Mix almonds into goat cheese.
- Cut small slit in dates and stuff with small amount of cheese mixture.
- Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
- Place on foil-lined baking sheet.
- Broil for about 10 minutes, turning over when browned on first side. Be careful as they can burn quickly.
- Arrange on serving platter and drizzle with reserved balsamic reduction.

- Heat the oven to 400 degrees F.
- Stuff 1 piece of cheese and 1 almond into each date, then wrap one piece of bacon around each date and secure bacon with a toothpick if desired. Arrange dates, bacon seam down and 1 inch apart in a shallow baking pan.
- Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more. Drain on a paper towel or parchment. Serve immediately.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

- Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
- Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
- Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

- Preheat your oven to 350 degrees and cover a baking sheet with foil. Combine the goat cheese and almonds in a small bowl. Mix well.
- Stuff each date with the goat cheese mixture - you want to stuff them so they are full but not overflowing. Wrap a piece of bacon around the date so that the date's opening is covered - stretch the bacon if you need to.
- Place the bacon covered date on the baking sheet, with the bacon edges on the bottom. Repeat with all the dates/bacon, spacing evenly on your baking sheet.

- Preheat oven to 425 degrees. Line a baking tray with foil and set aside. Using a sharp knife, slit the side of each date and remove the pit. Wrap each date in bacon and then stab completely through with a toothpick to hold the bacon in place. (If you don't use a toothpick, the bacon will shrink and slide off of the date as it cooks.) Place wrapped dates on the foil lined sheet.
- Bake for 12-15 minutes, until the bacon is cooked through and slightly crispy. While the dates are in the oven, pour some balsamic in the bottom of a small saucepan.
