Sunday is grill-out day for my husband, Cliff, and these bacon-wrapped stuffed jalapenos are one of his specialties. We usually feature them at our annual Daytona 500 party. They disappear from the appetizer tray in no time.

CREAM CHEESE STUFFED JALAPENOS WRAPPED IN BACON

Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

Steps:

  • Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
  • In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
  • Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
  • Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
  • Enjoy!

Steps:

  • Preheat oven to 425 degrees.
  • She says line a rimmed baking sheet with parchment paper. But I would set them on a baking rack in the rimmed baking sheet to get them out of the grease although they are harder to get out that way.
  • Cut a lengthwise slit down center of each pepper.
  • Cut a crosswise slit at top of each pepper to form a T.
  • Carefully remove seeds from inside of peppers, leaving peppers intact.
  • In a large bowl, combine black beans, corn, both cheeses, chili powder, and cumin.
  • Spoon about 1 1/2 tablespoons bean mixture evenly into each jalapeno.
  • Fold bacon half slice around each jalapeno.
  • Secure with wooden picks, if needed.
  • Bake for 15 minutes or until bacon is cooked through.
  • Serve immediately.

16 fresh jalapeno peppers
2/3 cup black beans, drained and rinsed
1/2 cup frozen corn, thawed
1/2 cup cheddar cheese, shredded
1/3 cup cream cheese, softened
1 1/4 teaspoons chili powder
1/2 teaspoon cumin
8 slices bacon, cut in half (optional)

Steps:

  • Directions: If using prawns, cook them in boiling water until they turn pink, about 1-2 minutes. Remove them from water and set aside. Place Jalapeños on a baking sheet under the broiler, turning occasionally until skins blisters and is lightly browned on all sides. Remove and place peppers in a sealed Ziploc bag. In a small bowl, combine cream cheese, cumin, salt, pepper, garlic, and cilantro. Beat eggs in a small bowl and set aside. Place bread crumbs in another small bowl. Remove Jalapeños from Ziploc bag and remove skins, Slice stem and cap off Jalapeños, removing seeds carefully. Cook bacon strips in a large frying pan until just cooked through. Set aside on a plate lined with paper towels. Stuff each pepper with cream cheese mixture and a cooked prawn. Wrap each pepper with one to two strips of bacon. Pour vegetable oil into a heavy saucepan and set over medium-high heat. Roll peppers in the eggs, then coat with bread crumbs. Deep-fry peppers in batches until golden brown on all sides, about 3-5 minutes. Drain on a plate lined with paper towels. Serve immediately. BACON WRAPPED STUFFED HABANEROS / JALAPENOS

Im sure this recipe has been done many times before, but I started making it several years ago with some friends. Simple, though a little bit labor intensive, and, if you like hot peppers, delicious!! We like spicy, so I sometimes substitute a few habaneros to heat it up a little more. (Not for everyone!!!!!!)

Steps:

  • Pre-Heat oven to 325.
  • Start by washing the jalapenos, cutting the stem off, and then cutting them in half lengthwise.
  • Next, devein and remove the seeds. ( I leave in for extra heat)
  • Now you are ready to stuff the peppers with cream cheese. Using a knife cut about a quarter of an inch slice of cream cheese, short side, and then smooth it into the pepper.
  • After this step is completed, you are ready to wrap them in bacon. I usually cut about half of the pack of bacon in half and use the full strips for the larger peppers. Now just start wrapping. If wrapped from one end to the other moderately tight, no toothpicks are needed to hold the bacon on.
  • This method should use just about all of the cream cheese and all of the bacon.
  • Now put them in the oven and bake for about 25 to 30 minutes. Check them periodically as oven temps vary. They are ready when the bacon is firm, not crisp and the cheese is slightly brown. Enjoy!

10 -12 jalapenos or 10 -12 habaneros

1 (8 ounce) package cream cheese

Steps:

  • Preheat oven to 450.
  • Cut the jalapenos in half lengthwise and remove the seeds and ribs. (If you like them hot, leave some of the seeds in).
  • In a medium bowl combine the cream cheese, cheddar cheese, salt, pepper and garlic powder.
  • Stuff the pepper halves with the cheese mixture.
  • Wrap each pepper with a slice of bacon and secure with a toothpick. Try to cover the whole top of the pepper so the cheese doesn't ooze out while it's cooking.
  • Place the wrapped peppers on a cookie sheet and cook for 15 - 20 minutes or until the bacon is crispy and cheese is bubbly. Remove from the oven and let cool slightly before serving.
