CHOCOLATE CUPCAKES WITH BAILEY'S CREME FROSTING

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Line 24 muffin cups with paper liners.
- Whisk together 2 1/2 cups flour, cocoa powder, baking soda, salt, and baking powder in a large bowl until thoroughly mixed.
- Beat in white sugar, 2/3 cup butter, water, 1 teaspoon vanilla extract, and eggs to make a smooth batter.
- Place chocolate chips into a bowl and mix with 2 tablespoons flour until the chips are coated; fold chocolate chips into the batter.
- Divide batter between the prepared muffin cups, filling each cup about 2/3 full.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, about 20 minutes. Remove from oven and let cool completely.
- While cupcakes are cooling, beat 1 cup butter, Irish cream liqueur, 2 teaspoons vanilla extract, and green food coloring with an electric mixer in a large bowl until mixture is smooth, thick, and evenly colored.
- Reduce mixer speed to low and beat in confectioners' sugar, 1 cup at a time, until frosting is desired consistency. Beat in more confectioners' sugar to make a stiffer frosting.
- Spread frosting on cooled cupcakes.

- In a medium bowl, blend together cream cheese, butter, and Bailey's. Gradually add powdered sugar, mixing well until it's all incorporated. Use immediately. The frosting will harden in the fridge, so plan on bring it back to room temperature if you must refrigerate it before frosting the cupcakes.

BAILEY'S BUTTERCREAM ICING
This is a fabulous buttercream icing with Bailey's in it, passed on to me by one of my best friends in Texas, who got the recipe from her aunt (and kicked it up a notch with some Bailey's!!). Beware: this ain't your mama's frosting! This definetly isn't the frosting you buy at the store either! This recipe makes enough thick, yummy buttercream frosting for one cake. Steps:
- Cream together butter, powdered sugar, vanilla and Bailey's. Add milk if it is too thick.
- Slather on a very cool cake.
- Kick back with a little slice of heaven.
BAILEYS FROSTING
Steps:
- Make the frosting: Whip the butter in the bowl of an electric mixer for several minutes. You want to get it very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time. [add the sugar slowly, quick buttercream frostings got less grainy, and tended to require less sugar to thicken them up.] When the frosting looks thick enough to spread, drizzle in the Baileys and whip it until combined. If this has made the frosting too thin (it shouldn't, but just in case) beat in another spoonful or two of powdered sugar.
