- 1. Heat oven to 500 degrees, sprinkle inside of each hen with a dash of salt and pepper. (DON'T FORGET STUFFING ) Tie legs together and place hens in shallow roasting pan breast side up. brush with melted butter. 2. Roast, uncovered for 15 minutes. Reduce heat to 400 degrees. 3. Turn hens breast side down and pour 1/2 cup water over the hens. Cover pan with foil. Bake for 30 minutes. 4. Turn hens breast side up. Baste with pan drippings. Roast, uncovered - for 30 minutes - basting several times. 5. Meanwhile, make sauce. In small saucepan, combine orange peels, lemon peels, orange juice and lemon juice. Bring to boil and cook over medium heat, uncovered for 15 minutes or until peels become transparent. 6. Add jelly, wine, mustard, ginger and Tabasco sauce. Bring to boil, reduce heat and simmer for 20 minutes. 7. To serve ~ arrange birds on serving platter or individual plates and pour sauce over them.

Cornish game hens stuffed with a vegetable mixture, then roasted. A Cornish game hen recipe that I found and tweaked a bit for the taste and size of our small family, but it would be very easy to adjust it to fit your needs. It goes well with oven-roasted potatoes.

- Preheat oven to 325 degrees F (165 degrees C).
- In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
- Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
- Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

- Clean cornish game hen. Prepare stuffing as directed. Salt, pepper and sage inside of hen. Stuff with prepared stuffing. Wrap hen in bacon and coat with melted butter. Cover with foil. Bake in 350 oven for 1 hour, basting with butter every 15 minutes. Remove foil and cook uncovered for last 15 minutes. Put any excess stuffing in pan with hens and bake for last 15 minutes Remove stuffing and let sit for 15 minutes before serving. Serves 4

- To start, grab kitchen shears or a sharp knife. I used all-purpose kitchen scissors. Place hen or chicken breast-side down and cut along one side of the backbone. Repeat with the other side. Don't discard the backbone as you can use it later for stock. Flip the bird over and using the palm of your hand, press down on the breastbone. Use your muscles for this and you'll hear a snap. Presto, you have now spatchcocked! To barbecue the cornish hen, season to your preference and cook over a medium heat 20 to 25 minutes (turning halfway). Note: Remove wing tips if barbecuing as they tend to burn easily. If using an oven, preheat to 425 degrees and roast cornish hens 40 to 50 minutes or until thickest part of breast reaches 165 degrees, allow to rest 5 to 10 minutes. Enjoy!

- In a small saucepan, bring broth and rice to a boil. Reduce heat; cover and simmer for 60-70 minutes or until rice is tender and liquid is absorbed. , Meanwhile, in a nonstick skillet, saute onion and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the apricots, almonds, 1/3 cup apricot nectar, 1/4 cup wine, 1/4 teaspoon salt, poultry seasoning and 1/8 teaspoon pepper. Uncover; bake 15-20 minutes longer or until a thermometer reads 180°. , In a large saucepan, combine remaining nectar and wine. Bring to a boil; cook for 5-7 minutes or until reduced to 1/2 cup. Add the vinegar, cinnamon and remaining salt and pepper. Reduce heat; cook and stir over medium-low heat for 1 minute. Serve with hens and rice.
