- Heat a non-stick skillet over medium heat. Place bell pepper ring in the hot skillet. Crack egg into bell pepper ring; cook until bottom holds together and corners are browned, 2 to 3 minutes. Flip and cook until desired doneness is reached, 2 to 3 minutes more; season with salt and ground black pepper.

Steps:
- Slice a yellow bell pepper on its side to create rings.
- Place the 2 rings in a pan and let simmer for a few seconds.
- Crack one egg inside each of the rings.
- Cover the pan and cook 4-5 minutes. (or to desired wellness)
- Serve the bell pepper egg rings with toast and fruit. (optional) Top with salt and pepper to taste.

- Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
- Cut the bell peppers carefully around the stem and remove the stem and seeds. Cut the peppers crosswise into ½-inch (1 cm) slices.
- In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate bowl and whisk. Add the flour to a third bowl.
- Dredge the bell pepper rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
- Arrange the bell pepper rings on the baking sheet.
- Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
- Serve with your favorite dipping sauce.
- Enjoy!

Steps:
- Put bell pepper rings in a pan that has the butter melted in it. saute for a coupla minutes with lid on on low to desired doneness of bell pepper
- Put thin slices of tomato inside ring.
- Break egg into 1 ring.
- Salt and pepper.
- Put dill on top of egg. I think basil, parsley, or chives would work also.
- you can put some shredded cheese on here if you wish
- Cover with lid and cook until yolk is hard. You may need a little water, like 1 teaspoon, to steam. Some of the yolks were soft so it must be to a person's preference.

- Heat oven to 180C/160C fan/gas 4. Divide ½ batch roasted red pepper sauce (see 'Goes well with...' below) between four small baking dishes. Take 4 eggs and break 1 into each dish. Bake for 7-10 mins until the whites are set and the yolks are still runny.
- Put 4 thick slices of ciabatta on a baking tray, drizzle with olive oil, rub with 1 garlic clove and cook in the oven until lightly toasted. Sprinkle the eggs with chopped parsley and black pepper, and serve with the toasted ciabatta.
