BAKED HADDOCK

Haddock (or other white fish) is lightly breaded and baked. Parmesan adds a nice flavor. Quick and easy to prepare, it's a nice alternative to deep frying.

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
  • Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

Steps:

  • Preheat the oven to 375F, line a roasting pan with parchment.
  • Lay fish fillets in a single layer on the bottom of the dish, then top with scallops and shrimp.
  • Pour the white wine and lemon juice overtop of the seafood.
  • In a bowl, toss butter, cracker crumbs, garlic powder, black pepper and lemon zest.
  • Sprinkle over the seafood.
  • Bake 15 minutes, then turn the broiler to HI and broil 2 minutes, until browned.

Steps:

  • HADDOCK: In a small bowl mix lime juice, Worcestershire sauce, garlic seasoning, salt, and black pepper to taste. Place haddock on an oil sprayed piece of foil, pour the mixture over the haddock, drizzle with olive oil then sprinkle with dried parsley flakes. Refrigerate at least 1/2 hour. Bake in the foil, at 400°F hot oven or place foil on the grill for 15 to 20 minutes or until fish flakes easily. Serve with lime butter sauce over the top. LIME BUTTER SAUCE: In a large fry pan, melt 1/2 stick of butter, add 1 teaspoons of minced fresh garlic, add a drop of Worcestershire sauce. Whisk all together. Add 2 tablespoon Italian parsley, and the juice of one fresh lime. Cook just a few minutes on low, making sure all the flavors have combined. When fish is cooked, pour over the fish and serve.

  • Preheat oven to 350°F. Make Stove Top Stuffing as the box says but instead of adding water use clam juice. When stuffing is done stir in peeled shrimp and scallops. Cover and set aside.
  • Beat eggs and roll haddock in egg then bread crumbs. Put half of haddock in 9x13 baking dish covering the bottom. Top with stuffing and cover with provolone cheese. Put remaining haddock on top.
  • Bake for 50-60 minutes.
