I found this a while ago and I love it. Perfect, easy breakfast.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Put butter in a 9-inch pie pan. Place pan in the preheating oven until butter is melted, 5 to 10 minutes.
- Whisk flour, milk, eggs, white sugar, and salt together in a bowl; pour mixture into the hot butter.
- Bake in the preheated oven until pancake is brown on the edges and a toothpick inserted in the center comes out clean, 20 to 24 minutes. Squeeze lemon over pancake and sprinkle with confectioners' sugar.

BAKED PANCAKE SQUARES
First made on September 17th, 2005. The family loved them! They were quick and easy and also light and fluffy. Will definitely make these again! These squares combine the taste of pancakes with the texture of pound cake. Serve with maple syrup, honey or jam. Add mini-chocolate chips for a special treat!

Steps:
- Preheat oven to 350 degrees. Lightly grease an 8x8-inch baking dish.
- In a large mixing bowl, beat together milk, butter and egg substitute. Add the sugar, then gradually beat in the flour .
- Carefully stir in the baking powder and salt. Pour batter into prepared pan.
- Bake in preheated oven for 30 minutes.
- Cut into 16 square servings.

- Preheat the oven to 350°F. Spray a 9×13” rimmed sheet pan with cooking spray. Melt 1/4 cup of butter in the microwave.
- Whisk the flour, baking powder, and salt in a small bowl. In a large bowl, combine the buttermilk, eggs, and melted butter. Add the dry ingredients to the wet ones and mix just until combined. The batter will be lumpy.
- Pour batter into the prepared pan and top it with the sliced strawberries. Bake for 15 minutes. While it’s baking melt two tablespoons of butter.
- Take the pan out of the oven and turn on the broiler. Brush the top with butter and sprinkle the sugar over the top. Broil for a few minutes until golden brown in spots.

- Preheat the oven to 400 degrees F. Line the bottom of a 9X13-inch baking pan with parchment paper and lightly grease with nonstick cooking spray. Set aside. *I've only used a metal baking pan for this recipe; if using glass, the pancake may bake faster.
- In a medium bowl, whisk together the buttermilk, egg, and butter. Add the flours, sugar, baking powder, baking soda, and salt. Whisk until just combined and no dry streaks remain (it's ok if the batter has small lumps).
- Spread the batter evenly in the pan; it will be a thin layer. If desired, top the batter with 1 cup fresh berries (could try frozen, too), and sprinkle with coarse sugar.
- Bake for 15-20 minutes until puffy and lightly golden on the edges; the top of the pancake will spring back lightly when gently pressed. Serve warm or at room temperature with butter, syrup, jam or other pancake toppings.
