- Preheat oven to 375°F Cook pasta according to package directions. Drain well.
- Meanwhile, in a food processor or blender, combine undrained tomatoes, tomato paste, wine or tomato juice, dried oregano, pepper and crushed red pepper. Cover and blend or process until smooth. Set aside.
- In a large skillet, cook ground beef and onion until meat is brown. Drain off fat. Stir tomato mixture into meat mixture in skillet. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in cooked pasta, and olives.
- Divide the pasta mixture among six 10 to 12 ounce individual casseroles. Bake, covered, for 15 minutes. (Or spoon all of the pasta mixture into a 2-quart casserole. Bake, covered to 30 minutes). Sprinkle with mozzarella cheese. Bake, uncovered, about 5 minutes more or until cheese is melted.

- In a medium frying pan, heat the oil and butter over low heat. Add the onion, carrot, celery, garlic, parsley and basil and cook until very soft, about 20 minutes.
- Raise the heat to moderate, add the ground beef, fennel seed, salt and pepper and cook, stirring, until the meat is no longer pink, about 5 minutes.
- Add the wine and cook until almost evaporated, about 5 minutes.
- Add the tomatoes with their juice and simmer, covered, for 30 minutes.
- Stir in the parmesan.
- Heat the oven to 350F.
- In a large pot of boiling, salted water, cook the rigatoni until almost done, about 12 minutes. Drain.
- Lightly oil a 3 quart oval baking dish. Toss the pasta with the meat sauce and put half of it in the baking dish. Top with half the mozzarella. Repeat with remaining pasta and mozzarella.
- Bake until the pasta is piping hot, about 20 minutes.

- Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
- About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

I made this this week and we all liked it. It's from The Big Book of Casseroles by Maryana Vollstedt. I substituted ground chicken for the beef,used linquini, and upped the herbs to a half teaspoon each.The pasta absorbs the sauce while baking so it is really tasty.

- Preheat oven to *350.
- In a large skillet over medium heat, saute meat, onion, mushrooms and garlic ( I added the mushrooms later with the sauce) until meat is no longer pink and veggies are tender.Add oil if needed.
- Stir in tomatoes, tomato sauce, parsley, and seasonings. Simmer, uncovered, until slightly thinckened - about 15 minutes.
- Combine meat sauce and spaghetti in a 4 quart casserole dish lightly coated with cooking spray or oil and mix thoroughly.
- Top with cheeses.
- Bake, uncovered, until bubbly, 50 to 55 minutes. Let stand ten minutes before serving.

- 1. Saute onions in small amount of olive oil until light brown. If using fresh garlic, dice up two cloves and put in with onions.
- 2. Once onions are soft and light brown, mix in meat, and sprinkle with Mrs Dash salt/pepper. Saute until brown.
- 3. Add in can of crushed tomatoes and can of tomato sauce and stir.
- 4. Simmer for 45 minutes at least. Taste and add more seasoning if needed.
- 5. Boil water for pasta and cook pasta for 8 to 10 minutes. We like our pasta al dente (not too soft). Taste as you go.
- 6.When ready - strain - make sure all the water is gone. Put a little sauce on pasta so it does not stick. Keep the rest of the sauce in the bowl so you can each have as much as you want. A salad is a great side dish -- add grated parmesan if you like.

- In a large stock pot, heat olive oil over medium heat. Add Italian sausage, beef chunks, sausage links, onion, and garlic: cook and stir until meat is thoroughly done. Stir in tomato paste, crushed tomatoes, bay leaves, and cinnamon. Season with salt and pepper to taste. Simmer sauce over low heat for 1 hour.
