BAKED PEARS WITH CURRANTS AND CINNAMON
Steps:
- Preheat oven to 350°F. Using apple corer, cut through stem of each pear and all the way through pear to base to remove core. Trim bottoms so that pears stand straight. Arrange pears in 15x10x2-inch glass baking dish. Combine sugar, brown sugar and cinnamon in medium bowl. Add currants. Fill pear cavities with half of sugar mixture. Stir cup water into remaining sugar mixture; pour around pears. (Can be made 8 hours ahead. Cover; chill.)
- Bake pears uncovered until tender and sauce is syrupy, adding more water to dish by 1/4 cupfuls if syrup becomes too thick and basting occasionally, about 50 minutes. Serve pears warm with syrup.
CINNAMON ROLL-STUFFED PEARS
Steps:
- Place a rack in the middle of the oven and preheat to 350 degrees F.
- Halve the pears lengthwise and scoop out the centers with a tablespoon to make a cavity that will fit a cinnamon roll. Cut a thin slice from the bottom of each pear half so the pears sit flat. Arrange the pears on a rimmed baking sheet and fit a cinnamon roll into each cavity. Sprinkle the pears and cinnamon rolls with the sugar.
- Bake until the pears are tender and the cinnamon rolls are puffed and golden, about 20 minutes.
- Empty the icing packet into a small bowl and add the lemon juice, cinnamon and cloves. Stir to make a smooth glaze.
- Drizzle the glaze over the pears and cinnamon rolls. Serve warm.
BAKED PEARS WITH CURRANTS AND CINNAMON

- Preheat the oven to 375 degrees F.
- Place the pears, cut-side up, in a shallow 2-quart baking dish. Sprinkle with the sugar and cinnamon, and add a small pat of coconut oil to each pear half. Pour the wine into the bottom of the baking dish, being careful not to disturb the pears. Sprinkle the currants over the pears -- it's OK if some fall into the wine. Place in the oven and cook until fork tender, about 50 minutes.
- To serve, set pears on a plate and dollop with mascarpone. Drizzle with some of the juices and currants from the baking pan.
GINGERED PEAR AND CURRANT BREADS
Steps:
- Into a bowl sift together the flour, the baking powder, the salt, and the cinnamon. In a small bowl toss together the pears and the lemon juice. In a large bowl with an electric mixer cream the butter with the brown sugar and beat in the vanilla and the eggs, 1 at a time. Add the ginger and the pear mixture and beat the mixture until it is combined well. Beat in the flour mixture and beat the mixture until it is just combined. Stir in the currants, divide the batter among 4 buttered and floured loaf pans, each 5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a preheated 350°F. oven for 40 to 45 minutes, or until they are pale golden and a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.
RIESLING BAKED PEARS
So yummy. Pears oven baked and poached in a honey-wine sauce with cinnamon and orange flavors infused. The first time DH and I had this for dessert we were simply astounded at how these simple flavors combined to make such a rich and flavorful treat.

- Tip: For the orange zest, scrub the orange first and then use a vegetable peeler to remove the strips of zest. Make sure to leave behind the bitter, white pith.
- Preheat oven to 400 degrees. Slice a thin piece off the bottom of each pear so that it will sit flat, standing up straight.
- Arrange the pears in a pie pan or oven-proof small casserole dish.
- Whisk wine and honey in a medium bowl until blended. (I usually have to microwave mine to make the honey melt a bit so that they will combine.).
- Pour honey-wine mixture over pears and add cinnamon sticks, bay leaves and orange zest to the liquid.
- Roast the pears, basting every 15 minutes, until they are tender and a bit wrinkled (about 45 minutes to 1 hour).
- Use a slotted spoon to transfer the pears to serving dishes. Put the honey-wine mixture into a small saucepan and bring to a boil. Boil until slightly thickened, about 6 minutes. Drizzle over pears and garnish with cinnamon sticks and orange zest.
- Serve warm, at room temp, or chilled.
- Note: We sometimes put a small scoop of vanilla ice cream on this. Very rich and yummy. Another option: try cheese, such as ricotta or mascarpone -- sweeten cheese and stir it first.

BAKED PEARS WITH ORANGE CINNAMON SAUCE
The flavours in this dish remind me of Christmas, and for that reason it would be a nice desert around the holidays, but we like it any time of year. It's easily doubled to serve more people.

Steps:
- Core and halve the pears.
- Place them face down in a greased baking dish.
- Whisk together the orange juice, cornstarch, cinnamon, cloves, sugar and water.
- Pour over the pears.
- Sprinkle over the raisins.
- Cover the baking dish with aluminium foil and bake in a 425 F or 220 C oven for 25 minutes.
- This is the time needed to bake fairly hard pears, so if yours are soft you may be able to take them out after 10-15 minutes.
- Take the dish out of the oven.
- Using a spoon, scoop up any juice on the bottom of the pan and drizzle it over the pears.
- Sprinkle over the brown sugar.
- Turn on the top element of the oven and put the pears back in the oven for a couple minutes until they start to brown on top.
- Remove from the oven.
- Divide between two bowls and serve topped with a scoop of vanilla ice cream.

- Cut top quarter of pears off; create a well by scooping out the core, being careful not to puncture the bottom of the pear. Arrange pears in a shallow baking dish.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking dish with 1 tablespoon butter. Sprinkle 1 tablespoon sugar into buttered dish.
- Rub remaining 1 tablespoon butter over pear halves; arrange pears cut sides down in prepared baking dish and sprinkle with remaining 1 tablespoon sugar.
- Bake in preheated oven for 10 minutes. Pour cream over pears and continue baking until tender, about 20 minutes more.
