- Cook pasta and drain.

- Cook pasta to al dente. Strain completely. In frying pan after adding butter, combine shrimp, mushrooms, broccoli and seasonings. Mix well and let broccoli and shrimp thaw if they aren't already. Add pasta to big mixing bowl with sauce. Stir. Add the ingredients from the frying pan, and one tbsp grated parmesan. Stir until mixed all the way. On a 9x12 baking pan greased, spread half of the mixture on the pan. Put approximately 1 1/2 cups mozzarella cheese on top. Then laying remaining half of penne mixture on top of the cheese. Put in oven for 20 minutes on 375. After 20 minutes, put the remaining mozzarella and parmesan cheese on top. Put back in oven for approx 5-7 min letting last layer of cheese melt.

Steps:
- Topping: process the bread and butter in a food processor fitted with the steel blade until coarsely ground, about six 1-second pulses; set aside.
- Filling: adjust an oven rack to the middle position; preheat oven to 400°.
- Bring 4 quarts of water to a boil in a Dutch oven over high heat.
- Stir in 1 T salt and the broccoli; cook until bright green, about 1 minute.
- Remove the broccoli using a slotted spoon or wire spider and spread it out on a baking sheet to cool.
- Return the water to a boil; add in the pasta and cook, stirring occasionally, until al dente.
- Drain the pasta and toss with 1 T olive oil; leave it in the colander and set aside.
- Wipe the pot dry; add in the remaining 2 T oil and return to medium heat until shimmering.
- Add in the cremini and 3/4 t salt; cook until the mushrooms have released their juices and are brown around the edges, about 10 minutes.
- Add in the onion and cook until softened and beginning to brown, about 8 minutes.
- Stir in the garlic and thyme; cook until fragrant, about 30 seconds.
- Add in the flour and cook, stirring constantly, until golden, about 1 minute.
- Slowly whisk in the wine and the dried porcini with their reserved liquid; cook until the liquid is almost evaporated, about 1 minute.
- Slowly whisk in the broth and cream; bring to a simmer, whisking often.
- Add in the chicken and cook, stirring occasionally, until no longer pink, about 4 minutes.
- Off the heat, stir in the Asiago and pepper.
- Add in the cooked pasta and broccoli to the sauce; stir to combine.
- Transfer to a 13 x 9 inch baking dish and sprinkle with the bread crumb topping.
- Bake until the casserole is bubbling and the crumbs are lightly browned, about 15 minutes.
- Serve immediately.

SHRIMP ALFREDO BROCCOLI BAKE

- Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish with cooking spray.
- Cook and stir shrimp in a skillet over medium heat until slightly pink, 3 to 5 minutes. Add broccoli; cover skillet and let broccoli steam, about 5 minutes. Remove from heat.
- Spread angel hair pasta over the bottom of the prepared baking dish. Top with shrimp and broccoli. Pour Alfredo sauce over shrimp and broccoli; cover sauce with Parmesan cheese.

This is a recipe that's great to serve to a large group of people. Double or triple the recipe and its awesome for a gathering of friends and family. You can pretty much substitute the mushrooms, shrimp, and bacon for anything else that you like........very versatile. By the way, this recipe says 0 vegetable oil. You still need the oil, that's just how it shows up, sorry.

- Preheat oven to 400 degrees. Place the potatoes on a baking sheet. Coat and rub the potatoes with the oil and season with salt and pepper. Bake for 1 hour until cooked through.
- In the meantime, cook the bacon on a griddle or sauté pan over medium high heat until crisp. Transfer to a paper towel-lined plate and set aside.
- Season the shrimp with a little salt and lemon pepper. On the same griddle or pan that you cooked the bacon in, cook the shrimp for about 2 minutes on each side until pink. Set aside in a medium bowl.
- Cook the mushrooms in that same griddle or pan that the bacon and shrimp were cooked inches Sauté until tender and season with salt and pepper. Set aside in the bowl with the shrimp and poor the juices from the pan over the mushrooms and shrimp. Chop the bacon into bite size pieces.
- Remove the potatoes from the oven and cool long enough to handle them, about 10-15 minutes. Lower the oven heat to 350. Using a sharp knife, cut the potatoes, length wise, in half. Place each half on a bigger baking sheet if needed to fit. With a spoon, scoop out the center of the potato in a large bowl, leaving about a 1/4 inch border along the skin. In the bowl with the potato, add the salt, pepper, seasoned salt, butter, sour cream, milk or cream, 1/4 cup parmesan cheese, and 1 cup cheddar cheese. Mash with a potato masher. Add the bacon, mushrooms, and shrimp to the potato mixture and stir to combine with a spoon.
- Spoon the filling into each potato halve. Top each potato with the remaining 1/2 cup of cheddar cheese and sprinkle with cayenne pepper. Bake in the preheated oven for 15-20 minutes until the cheese is melted and the potatoes are heated through. Serve while hot.
- (Note: If you want to make these potatoes ahead of time, prepare them up to the point when you fill the potatoes. Do not top with the cheeses and cayenne pepper until right before baking. Cover them with aluminum foil and refrigerate up to 24 hours.).

SAUTéED BROCCOLI AND MUSHROOMS
This recipe just caught my eye while I was reading Cooking Light, Sept/07, issue. Have taken the liberty of adding some toasted almonds and crushed red pepper flakes to an otherwise wonderful recipe. - Fill a large pot with lightly salted water and bring to a rolling boil. Stir in fettuccine, bring back to a boil, and cook over medium heat until tender yet firm to the bite, about 8 minutes. Drain.
- Heat heavy cream and 1 cup butter together in a large saucepan over medium heat until butter is melted. Add Romano cheese, Parmesan cheese, 1 clove garlic, salt, and black pepper; cook and stir until cheese is melted and sauce thickens, about 5 minutes. Remove from heat.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside. Meanwhile, cook pancetta in a large skillet over medium heat until browned but not crispy, about 5 minutes. Drain on a paper towel-lined plate and set aside.
- Pour pancetta grease out of the skillet, and add butter. Increase heat to medium-high and stir in sliced mushrooms. Cook and stir until the mushrooms have softened and released their liquid.
