Steps:
- Heat oven to 350°F and position racks in top and bottom thirds.
- Wash potato (or potatoes) thoroughly with a stiff brush and cold running water.
- Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking.
- Place in a bowl and coat lightly with oil.
- Sprinkle with kosher salt and place potato directly on rack in middle of oven.
- Place a baking sheet (I put a piece of aluminum foil) on the lower rack to catch any drippings.
- Bake 1 hour or until skin feels crisp but flesh beneath feels soft.
- Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another.
- It will pop right open.
- But watch out, there will be some steam.
- NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

- Preheat the oven to 400 degrees F.
- Toss the potatoes in a bowl with the oil, salt, and pepper until completely coated. Place on a baking sheet and bake until fork tender, about 45 minutes.
- Meanwhile, bring a small pot of water to a boil and salt it generously. Fill a medium bowl with ice water. Put the chives in the boiling water and cook until bright green, about 30 seconds. Immediately, plunge into the ice water to set the color. Squeeze all the water out of the chives and give them a rough chop. Put into a blender with the sour cream. Pulse until you have a smooth green sauce and season with salt and pepper, to taste. Chill until ready to serve. (Or, thinly slice the chives and stir into the sour cream, season with salt and pepper, to taste.)
- Cut the potatoes lengthwise and then across. Pinch and press the sides to open the potatoes. Divide the butter among the potatoes and serve with the sour cream. Garnish with crumbled bacon if desired.

- Heat the oven to 220C/200C fan/gas 7. Rub a little oil over each potato and put on the top shelf of the oven. Bake for 20 mins, then turn down the oven to 190C/170C fan/ gas 5 and bake for 45 mins-1 hr more until the skin is crisp and the inside soft. - Slice potatoes in half lengthwise and pierce the meat using a fork or knife. Preheat oven to 350 degrees. While preheating oven add 3-4 tablespoons butter or margarine to a baking sheet or baking dish and melt in oven (for 4 potato halves, you should have a liberal amount of butter or margarine coating the bottom).
- When butter is melted remove pan and add a liberal amount of garlic salt. Add parsley, and place potatoes face down in butter.

- Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
- Wash and peel the sweet potatoes. Cut them into medium size pieces.

350 ROASTED PARMESAN POTATOES
What does the 350 mean? 95% percent of what I cook in the oven seems to cook at 350 degrees, and when I look for something to cook along with it, it nearly always cooks at a higher or lower temp. Rather than having to figure out, "ok, do I need to cook this at a lower temp for a little longer or at a higher temp for a little less?," I came up with this easy roasted potato dish that cooks at 350 and goes with just about everything. - Combine flour, seasoning salt and Parmesan cheese in a plastic bag, mixing well.
- Add cubed potatoes to bag and shake to coat.

- Preheat oven to 350 degrees.
- After your oven has preheated put your stick of butter in a 13x9 pan, and place it in the oven to melt.
- If you have the whole potatoes then slice your potatoes while you are melting your butter.
- After your butter has melted pull your pan out and carefully add your potatoes
- Gently stir potatoes around to coat potatoes with butter.
