BAKED TURKEY PASTRAMI CASSEROLE

When you want something a little different than just spaghetti and sauce. Turkey pastrami has less fat than regular pastrami and goes great in this dish. Can make it ahead and just plop it in the oven to cook. Only 263 calories per serving.

Steps:

  • 1. Preheat oven 350 degrees.
  • 2. Add oil to large skillet. Place over medium high heat. Add onions and green pepper. Saute until tender. Add mushrooms, garlic, and pastrami and cook until heated through. Deglaze pan with wine and reduce by half.
  • 3. Add the seasoning, spaghetti sauce and pasta. Spoon mixture into a 13x9x2 inch baking dish. Cover and bake 25 minutes. Remove cover add cheese and bake uncovered another 5 minutes or until cheese melts.

1/2 lb spaghetti cooked
1 Tbsp olive oil
1 medium onion diced
1 medium green pepper diced
8 oz fresh mushrooms sliced
8 oz turkey pastrami cut into julienne strips
16 oz jar of spaghetti sauce
3/4 c dry white wine
2 tsp dried italian seasoning
2 c shredded mozzarella cheese
3 Tbsp fresh basil for garnish
2 clove garlic minced

Turkey-Pastrami Croque-Madame Casserole image

Steps:

  • Preheat oven to 450 degrees. Trim ends of bread so it fits in a 9-by-13-inch baking dish, then toast directly on oven rack until crisp, 8 to 10 minutes. Melt 3 tablespoons butter in a saucepan over medium-high heat. Add flour; cook, whisking, until golden, 2 minutes. Whisk in milk. Boil, still whisking, until thickened, 2 minutes. Remove from heat. Whisk in Dijon, 1 cup cheese, 1 teaspoon salt, and 1/4 teaspoon pepper. Spread 3/4 cup cheese sauce evenly in bottom of dish. Nestle bread into sauce, cut-side up. Top with pastrami and remaining cheese sauce. Sprinkle with remaining 3/4 cup cheese.
  • Bake until bubbly and browned in places, 15 to 18 minutes. Fry eggs in remaining 1 tablespoon butter in a large nonstick skillet over medium-high heat until whites are set but yolks are still runny, 2 to 3 minutes. Top toasts with eggs; sprinkle with chives and serve.

1 loaf ciabatta (1 pound), split horizontally
4 tablespoons unsalted butter
3 tablespoons unbleached all-purpose flour
2 cups whole milk
1 tablespoon Dijon mustard
6 ounces Gruyere, shredded (1 3/4 cups)

Quick, easy, and suprisingly tasty. For slow, deliberate, meticulous, and older cooks like myself, double time to make. If my wife is in the kitchen supervising, the time is increased exponentially. Steps:

  • Preheat oven to 325 degrees.
  • Place split roll, inside up, on a baking sheet.
  • Bake until slightly browned.
  • Remove from oven.
  • Spread sauce on one half of roll and cover with turkey pastrami.
  • Place kraut on the other half and cover with cheese.
  • Return to oven and bake until cheese is melted. Serve hot.
  • If using horseradish sauce, serve with dill pickle chips and mustard on the side.
  • We have also used rye bread in lieu of rolls. Works well.

If you love reubens then this is for you! Thinly sliced leftover roast beef or steak may use in place of pastrami. You may double all amounts and make two layers if desired. Don't be shy with the dressing, sauerkraut and cheese--use as much as you want--the amounts stated are only a guideline, just make certain to use as much bread cubes as needed to cover the bottom of the baking dish. Place the cubes in the dish before baking just to be sure. Toasting the bread cubes prevents the bread from becoming soggy. You may skip this step if you wish, but the sauerkraut will need to to hand-squeezed to remove as much liquid as possible :)

Steps:

  • Set oven to 400°F.
  • Grease a 13 x 9-inch baking dish.
  • Lightly butter both sides of the bread slices.
  • Slice in to about 1-1/2-inch cubes then place on a baking sheet.
  • Bake until semi-crisp, but NOT hard and brown.
  • Spread the bread cubes in the prepared baking dish.
  • Sprinkle the sauerkraut over the bread cubes.
  • Layer the beef strips evenly over the sauerkraut.
  • Pour the salad dressing completely over the top (you may use more than 2 cups if needed).
  • Cover with foil and bake 400°F (bottom oven rack) for 20-25 minutes.
  • Remove from oven and sprinkle with shredded cheese and continue to bake UNCOVERED for another 6-8 minutes or until the cheese is melted and bubbly.

Cheesy Turkey Pastrami Tortellini Vegetable Bake image

Steps:

  • Cook the cheese tortellini according to package directions. drain and set aside.
  • In a large skillet add a little olive oil and place over medium high heat. Add the onions, asparagus, sugar snap peas and garlic. Saute 3 minutes. Add the Turkey Pastrami saute another minute. Add the Spaghetti sauce and Tortellini. Cook 3 minutes.
  • Preheat oven 350 degrees. Spray a casserole dish with cooking spray. Place half the Tortellini mixture in dish and then top with half the cheese. Repeat layers one more time. Place in oven for about 15 minutes until cheese melts and is bubbly. Serve garnished with basil
