After-Christmas Empanadas image

Steps:

  • Preheat oven to 400°. In a small bowl, combine turkey, stuffing, cranberry sauce and gravy., On a lightly floured surface, unroll 1 pastry. Roll out into a 12-in. circle. Cut with a floured 4-in. biscuit cutter. Repeat with remaining pastry., In a small bowl, whisk egg with water; brush over edges of pastry circles. Place 1 tablespoon filling on 1 side. Fold dough over filling. Press edges with a fork to seal., Place 2 in. apart on greased baking sheets. Brush tops with remaining egg mixture; sprinkle with sage if desired. Bake 12-15 minutes or until golden brown. Serve warm, with gravy or cranberry sauce if desired.

Turkey and Black Bean Empanadas image

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl, combine turkey, black beans, both cheeses, salsa, cilantro, and cumin. Mix well to combine.
  • Unroll pie crusts onto a flat surface. Using 4-inch cutter, cut out 6 circles. Divide turkey mixture into equal portions and place each portion (in mounds) on top of the pie crusts. Fold over and pinch the edges together to seal. Using a fork, make hash marks on the edges of the empanadas to ensure they are sealed. Transfer empanadas to a large baking sheet. Using a sharp knife, make small slits in the top of each empanada to allow steam to escape during cooking. Brush with egg wash and place into preheated oven. Bake for 15 minutes, until crust is golden brown.

Reserved roasted turkey (about 2 to 3 cups shredded)
1 (15-ounce) can black beans, drained
1/2 cup shredded pepper Jack or Monterey Jack cheese
1/2 cup shredded Cheddar
1/2 cup prepared salsa
2 tablespoons freshly chopped cilantro leaves
1 teaspoon ground cumin
2 (9-inch) refrigerated pie crusts
1 egg, beaten with water, if desired, for egg wash

Baked Turkey Sausage Empanadas image

Steps:

  • 1. Making Empanada Dough
  • 2. In a bowl, combine all wet ingredients, beat well and set aside. In a separate bowl, mix together flour and salt. Then add shortening and cut into the flour mix with a pastry blender or a fork.
  • 3. Make a well in the center of the flour mixture and mix in wet ingredients, blend well with a fork until dough becomes stiff. (You may add a little more cold water if required at this point.)
  • 4. Turn dough out onto a lightly floured surface. Knead dough until all the flour is incorporated and the dough is smooth. Then wrap dough in plastic wrap and refrigerate for about one hour. Dough will make about (10) 6" empanadas.
  • 5. Making Sausage Filling
  • 6. While dough is chilling, in a large skillet over medium heat add olive oil, onions, garlic, diced peppers and saute for about 2 - 3 minutes then add sausage; breaking it up into small pieces,cooking for 5 to 7 minutes or until sausage is no longer pink.
  • 7. Then add fresh basil and combine well. Remove sausage mixture from skillet and drain excess liquid and place in bowl. While sausage is warm add 1/2 of shredded cheese and blend well.
  • 8. Take dough from refrigerator and place on lightly floured surface and cut in 1/2 to make the first 5 empanada shells. Then repeat the process.
  • 9. Form empanada dough into mold and seal edges. If you do not have a mold, then 6" cookie cutter and cut out circles. Fill empanada dough with about tablespoon of filling and add a little more cheese. Then fold and use a fork to press the edges together.
  • 10. Preheat oven to 400 degrees, place empanadas on parchment lined baking sheet. Brush tops with egg wash and bake until brown for about 30 to 40 minutes.
  • 11. Remove and serve. Enjoy

EMPANADA DOUGH
3 c flour (plus a little more for kneading)
1 tsp salt
1/2 c cold water
1 egg, plus (1) egg white
1 tsp vinegar
3 Tbsp shortening
1 additional egg with a little water for egg wash
TURKEY ITALIAN HOT SAUSAGE FILLING
4 italian hot sausage links, remove from casing
1/2 onion, diced
1 c diced, bell peppers - yellow, red, and orange ( about 1/2 pepper each)
3 clove garlic, minced
1/4 c fresh basil, chop fine
1 c shredded italian six cheese blend

Spiced Turkey Empanada image

Steps:

  • Heat oven to 400°F. Sprinkle turkey with salt, pepper, cumin and chili powder. Heat oil in a large skillet over high heat. Cook turkey, breaking up with a spoon, until brown, 3 to 4 minutes. Stir in tomatoes, olives and jalapeños. Cover; reduce heat to low. Simmer until turkey is cooked through and tomatoes are soft, 3 to 4 minutes.
  • Coat a large cookie sheet with cooking spray. Cut dough into 4 equal portions. Pull dough into 4 flat disks, each 8 inches in diameter. Top each round with 1/2 cup turkey filling. Fold dough in half and fold bottom edge over top. Press closed. Transfer to cookie sheet and coat empanadas with cooking spray. Bake until dough is firm and golden brown, 10 to 15 minutes. Transfer to a wire rack to cool. Serve with 1/2 cup baby carrots. Store empanadas in an airtight container in the fridge for up to 3 days.

1/2 pound white-meat ground turkey
1/2 teaspoon salt

Steps:

  • In a large bowl, mix together the ground turkey, ginger, salt, sage, cayenne pepper, and black pepper until well blended.

Steps:

  • Mix turkey with chilled gravy in small bowl. Roll out 3 pastry sheets to 12-inch long rectangles on floured work surface. Cut out 2 six-inch rounds from each pastry sheet, using small plate as guide (6 rounds total). Place each round on one 8- to 9-inch parchment square.
  • Spoon 2 1/2 tablespoons mashed potatoes onto half of each pastry round; press lightly to flatten, leaving 1/2-inch border. Top with 2 to 3 tablespoons stuffing, then about 1/3 cup turkey mixture.
  • Brush glaze around filling on 1 pastry half. Fold plain pastry half over filling, stretching dough to cover. Seal edges with fork tines. Repeat to form 5 more empanadas. Transfer empanadas (still on parchment squares) to 2 rimmed baking sheets (3 on each sheet), spacing 2 inches apart. Chill empanadas 20 minutes.
  • Preheat oven to 425°F. Press edges of empanadas again with fork tines. Brush empanadas with egg-white glaze and cut small slits in top to allow steam to escape. Bake empanadas 10 minutes. Reduce heat to 350°F and bake empanadas until puffed and golden, 25 to 35 minutes longer. Serve empanadas, passing cranberry sauce alongside
