Baked Black Bean Veggie Burgers image

Steps:

  • Pre-heat oven to 375 degrees F.
  • Dry off the black beans as much as possible. In a bowl, mash black beans with a fork until thick and pasty.
  • Finely chop bell pepper, onion, and garlic, and stir into mashed black beans.
  • In a small bowl, stir together egg, spices, and chili sauce.
  • Stir egg mixture into beans. Mix in the bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.
  • Place patties on lightly greased baking sheet. Bake about 10 minutes on each side.

1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper
1/2 onion
3 garlic cloves
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon hot sauce
1 cup breadcrumbs

Baked Veggie Fritters / Burgers (Healthy) image

Steps:

  • Pre-heat your oven to 180c.
  • Chop the first four ingredients up into small cubes (as small as you can be bothered) and grate the carrot.
  • Place in a good-sized mixing bowl along with all the remaining ingredients and mix well.
  • If your mixture is a little runny then add some more cornmeal to bring it together.
  • Grease a baking tray with 1-cal spray and spoon the mixture on to form 4 good-sized patties.
  • Bake for around 30 mins or until nicely browned, turning half-way if you wish.
  • Serve hot or cold.

Best of Everything Veggie Burgers image

Steps:

  • Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 45 to 50 minutes.
  • Preheat an outdoor grill for high heat. Lightly oil a sheet of aluminum foil. Mash black beans in a large bowl with a fork until thick and pasty; set aside.
  • Place the bell pepper, onion, mushrooms, and garlic in the bowl of a food processor, and chop finely. Stir the bell pepper mixture into the mashed black beans. Place the brown rice and mozzarella cheese in the food processor, and process until combined. Stir the mixture into the black beans.
  • Whisk together the eggs, chili powder, cumin, garlic salt, and hot sauce. Stir the egg mixture into the black bean mixture. Stir in the bread crumbs, adding additional bread crumbs as needed until the mixture is sticky and holds together. Divide into 6 large patties.
  • Place patties onto the prepared foil, and grill until browned and heated through, about 8 minutes per side.
