BAKED WHITEFISH

Got this one from the newpaper and have made it a couple of times. Really good baked fish recipe and can you can use cod or halibut if whitefish is unavailable. :)

Steps:

  • In heavy pan, saute onion in butter& 3 Tbsp of white wine over medium heat, do not brown.
  • Spread onion over bottom of a shallow baking dish.
  • Arrange fish fillets over onion in dish overlapping thin edges.
  • Sprinkle with S& P, and add garlic.
  • Pour 1/3 cup of dry white wine (or lemon juice) over fish.
  • Add whipping cream or milk and oregano.
  • Cover with foil and bake at 425 degrees for about 10 minute.
  • Uncover, add Cheddar, Parmesan and breadcrumbs.
  • Distribute shrimp evenly over the top.
  • Bake, uncovered, for another 10 minutes or until top is golden brown, cheese is melted and fish flakes easily.

2 lbs skinless white fish fillets (can use halibut or cod)
2 small onions, sliced
1 tablespoon butter
3 tablespoons white wine
1 dash salt
1 dash pepper
1 clove garlic, minced or pressed
1/3 cup dry white wine or 1 1/2 tablespoons lemon juice
3/4 cup whipping cream (low fat, use 1/2 cup milk)
1/2 teaspoon dried oregano leaves or 1 -2 teaspoon chopped fresh oregano
1/3 cup grated cheddar cheese
1/3 cup grated parmesan cheese

BAKED WHITE FISH

This is based on a recipe I got from a friend 30 years ago. It was called Greek Fish but it didn't seem particularly Greek to me. The original recipe called for Haddock or white fish - I usually use snapper or cod fillets. Hope you like it - this is the first recipe I have posted!

Baked White Fish image

Steps:

  • Grease an 8 1/2" X 11" pan. (Or use baking spray.)
  • Cover the bottom of the baking dish with the sliced tomatoes.
  • Sprinkle with sugar and parsley.
  • Arrange fish on top.
  • Mix melted butter, paprika, Old Bay seasoning, salt, pepper and flour.
  • Spread over fish.
  • Bake at 400F for 20 min or until fish flakes easily with fork.
  • Squeeze lemon juice over casserole before serving and serve with additional lemon wedges.
  • Note 1: Put tomatoes in a bowl and blanch with boiling water. After a minute or so the skins will slip right off.
  • Note 2: For fillets, I like to overlap them slightly so that the thin parts are not over cooked. For steaks, use a pan that will be nicely filled by one layer of fish.
  • Note 3: If using frozen fish, I prefer to use it unthawed and just lengthen the cooking time a few minutes. Makes a quick family supper dish when time is short and nothing is thawed.
  • I like this with a green vegetable and white rice.

Steps:

  • Unwrap fish but leave it on the butcher paper. Season with salt and pepper on flesh side only. Sprinkle generously with flour, and then shake off the excess.
  • In a 12-inch non-stick skillet, heat 2 teaspoons of olive oil over medium high heat until hot but not smoking. Place the fish in the pan skin side down. Cook until golden, about 3 to 4 minutes. Turn the fish over and cook until the flesh is just cooked through and is no longer translucent, about 3 more minutes, depending on the thickness of your fish.

Steps:

  • Cut fillets into 6 portions. Combine flour, seasoned salt, and paprika; mix well. Roll fish in flour mixture. Place fish in a single layer, skin side down, in a well greased 15 by 10 by 1 inche baking pan. Drizzle 2 tablespoons melted butter over fish. Broil about 4 inches from source of heat about 10 minutes or until fish flakes easily when tested with a fork. While fish is broiling, saute almonds in remaining butter in a fry pan and allow to turn a golden brown, stirring constantly. Remove from heat. Add lemon juice, hot pepper sauce, parsley; mix. Pour over fish. Serve at once.

BAKED FISH

Cooking fish for 10 minutes per inch of thickness is an old rule of thumb that works perfectly when roasting fillets or steaks. It's just enough time to cook the flesh through so that it's opaque, but not so much that it flakes. The only hitch comes with fillets that are uneven. Use your judgment but err on the side of less is more. You can always put any undercooked parts back in the oven, but you can't undo overdone. Serve these as is in their purist form, or add your favorite sauce on the side. A pesto, aioli or vinaigrette would work well.

  • Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9x13-inch casserole dish.
  • Place casserole dish in the preheating oven until butter is melted, about 5 minutes.
