The grits mixture will almost fill the entire baking dish and will puff up when baking, but don't worry - it won't overflow. Also, switching sides, these grits can take the place of mashed potatoes anytime.

Steps:
- Place the milk, water, and salt into a large, heavy-bottomed pot over medium-high heat and bring to a boil. Once the milk mixture comes to a boil, gradually add the hominy while continually whisking. Once all of the hominy has been incorporated, decrease the heat to low and cover. Remove lid and whisk frequently, every 3 to 4 minutes, to prevent grits from sticking or forming lumps; make sure to get into corners of pot when whisking. Cook for 20 to 25 minutes or until mixture is creamy. Remove from the heat, add the pepper and butter, and whisk to combine. Once the butter is melted, gradually whisk in the cheese a little at a time until incorporated. Serve immediately.
- Cook's Note: To make it extra special, take either lobster, crab or chopped shrimp which has been pre-cooked and stir in at the end when adding cheese. Garnish with chopped chives.
BAKED HOMINY WITH CHEESE
The taste and texture of this dish is subtle and unusual but my BF and I think it's absolutely delicious. My apologies if you haven't found this as appealing as we do. The recipe comes from a fantastic cookbook of the midwestern region (of the U.S.) called "Hollyhocks and Radishes." The original ingredients call for 2 cups cream instead of milk and twice the butter, so if you don't mind the extra fat, go ahead. I also like to add more horseradish, at least 1 tablespoon. In my area hominy can be found in the mexican foods section of the supermarket.

Some people in this day & age do not even know what hominy is. This is a good casserole to start to learn of this good taste. This dish goes well with just about any meat. One of my favorites is with baked chicken. This dish can be doubled or tripled real easy.
