Steps:

  • Thinly slice then finely chop the shallots, garlic and ginger. Now finely chop the chilli, including the seeds. This amount of chilli gives a spicy but not too fiery kick to the chicken satay, but discard the seeds if you don't like the heat.
  • Heat the oil in a frying pan over a low heat. Add the shallots, garlic, ginger and chillies and fry for 1-2 minutes just to soften. Pour in a couple of tablespoons of water to soften, then stir in the spices (and freeze-dried lime leaves, if using) and fry for a minute.
  • Remove the pan from the heat, let the mixture cool down, then blend to a paste with a pestle and mortar, using an up-and-down motion with the pestle. It will take several minutes to make a soft paste.
  • Mix the spice paste, the coconut and, if using, the shredded fresh lime leaves with the minced chicken. Season with salt.
  • Break off pieces of the mixture the size of a large walnut. For each, flatten into a round and lay a lemongrass stalk or wooden skewer in the centre. Mould around the bulbous end of the stalk (or skewer), working it so it goes about 8cm up it.
  • Rough up the surface a little with your fingers so that the meat is not completely smooth and has some texture, then set aside while you shape the rest of the skewers. Brush each skewer with extra oil.
  • Cook the skewers on a preheated BBQ, griddle pan or grill for 8-10 minutes, turning several times. Serve on banana leaves.

Steps:

  • Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinate overnight in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Place the baking pan in the oven and bake for 30 minutes. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.

1 cup honey
3/4 cup soy sauce
1/4 cup minced garlic (8 to 12 cloves)
1/2 cup peeled and grated fresh ginger root
2 (3 1/2 pound) chickens, quartered, with backs removed

GRILLED INDONESIAN CHICKEN SATAY

This recipe was given to me by my neighbour who is one of the nicest people I know. She is originally from Indonesia and moved to Canada a few years ago. I am guessing at serving sizes, and cooking times so please adjust amounts to what you think you need. I am also guessing at the amount of oil added to the basting sauce as I was told just to add a little oil to make it easier to baste with. You may need more basting sauce depending on how much you put on while cooking and I would double or triple the sauce if you have more than a pound of meat.

Steps:

  • Soak wooden skewers in water for at least 30 minutes.
  • Thread chicken or pork onto skewers.
  • Season both sides with salt, pepper and garlic powder.
  • Mix sweet soy sauce, teriyaki sauce, oyster sauce oil together and set aside.
  • Grill chicken or pork on the BBQ, basting with the sauce as you cook the meat.

1 lb boneless skinless chicken thighs, cubed (or I use pork sometimes)
salt
pepper
garlic powder
1 tablespoon sweet soy sauce (kecap manis)
1 tablespoon teriyaki sauce (I use kikkoman baste and glaze teriyaki sauce)
1 1/4 tablespoons oyster sauce
1/4 teaspoon oil (use just enough to make it easy to baste with)
wooden skewer

INDONESIAN GRILLED CHICKEN

This recipe is from a Betty Crocker cookbooklet that I have had since 1995. I made a few changes. It makes a nice summer meal. The recipe says to serve it with couscous; however, I made Recipe #114887 and it made for a very colorful meal.

  • Combine garlic, chilies, shallots, lemongrass, turmeric, soy sauce, the juice of two limes, kaffir lime leaves only if using fresh (if using dry add to chicken, whole as part of the marinade, as you see above) and1/2 cup of coconut (or vegetable) oil in robot coupe. Pulse until chunks are broken down somewhat and then blend until a smooth paste is formed (about 3 minutes). Add salt, blend to combine.
  • Reserve two tablespoons of curry paste for sauce and refrigerate separately. Rub chicken with remaining paste, cover and refrigerate. Marinade for a minimum of 4 hours, preferably overnight.
  • Preheat oven to 450°F (230°C). Prep pan with a light coat of coconut or vegetable oil, remove chicken from fridge, plaster as much of the marinade on the bird as you can. Roast at 450°F (230°C) for 25 minutes. Reduce heat to 375°F (190°C), cut remaining limes in half and add to pan, flesh down and roast for another 30 minutes.
  • Coconut Curry Sauce: Combine remaining curry paste with coconut milk. Remove dish from the oven, remove both chicken and limes from pan and reserve, warm. Drain pan of excess oil. Mix coconut-curry mixture with the drippings in the bottom of the pan. Return chicken to the pan and return to the oven to finish. Cook until juices of the thigh run clear (approximately 20 minutes) or or until internal temperature reaches 170°F (77°C)
