Steps:

  • Wash and pit cherries; wash, thinly slice and seed the orange.
  • Put cherries and orange slices into preserving kettle and add the lemon juice and sugar.
  • Cook the mixture, uncovered, about 45 minutes, stirring frequently until it is thick and transparent.
  • Remove from stove.
  • Skim off the foam with a metal spoon, then add the nuts and the raisins and cook another 10 minutes.
  • Ladle into hot sterilized jars and seal immediately.

5 lbs bing cherries
1 orange
1 lemon, juice of
4 cups sugar
1 cup chopped almonds or 1 cup pecans
1 cup seedless raisin

Steps:

  • Cook tomatoes 45 minutes.
  • Add sugar, lemon, and ginger.
  • Cook until thick and smooth.
  • Pour into sterilized jars to within 1/2 inch of top.
  • Put on cap, screw band firmly tight.
  • Process in Boiling Water Bath 10 minutes.

18 cups tomatoes, cut in chunks
3 teaspoons ginger
6 cups sugar
3 lemons (thinly sliced)

This recipe was presented at the 7th Annual Kohler Food & Wine Experience in Kohler, Wisconsin by Chef Ryan Anderson. Chef Anderson served this conserve with his Wisconsin Raclette Cheese Honey Truffle Pasty (I've posted my variation here at Recipezaar under Raclette, Honey, and Mushroom Pastries recipe #263143). This was a wonderful holiday appetizer with the flavors of Christmas spices!

Tomato Conserve image

Steps:

  • Combine the tomatoes, sugar, oranges, cinnamon, and cloves in a heavy-bottom pot and bring to a simmer.
  • Cook for 25 minutes and strain the tomatoes, reserving the juices.
  • Return the juices to the pan and simmer 10-15 more minutes to reduce and concentrate their flavor.
  • Combine the tomatoes and the juices and allow to cool to room temperature.

4 cups tomatoes, peeled and diced with the seeds
4 cups sugar
1/2 orange, with the rind on & sliced very thinly
1 cinnamon stick
5 cloves

Ahh summer tomatoes and caramelized onions seasoned with garlic, rosemary and thyme. All packed into jars for gift giving to enjoy the summer's bounty throughout the year. Enjoy on brie cream cheese with crackers or crusty bread. Toss into pasta or a grain for a quick easy salad. Top a sandwich for a healthy choice to mayonnaise.

Tomato Caramelized Onion Conserves image

Steps:

  • In a large pan heat the butter and oil. Add onion, garlic, salt and sugar cook over medium-low heat till golden brown about 20-30 minutes.
  • Add tomatoes bring to a boil then reduce heat to simmer for 15 minutes. Softening the tomatoes and reduce the liquid. Add remaining ingredients bring back up to a boil then remove from heat.
  • Ladle into sterilized jars leaving ¼ inch head space. Wipe rims and adjust lids. Process the jars for 5 minutes.
  • Remove from canner and let cool.

  • Prepare 8 half pint jars, lids, and rings. Sterilize the jars and keep them in the hot water till its time for processing. Make sure to fill your water bath canner and get the water to a simmer.
  • In a large skillet or enameled dutch oven add oil, onions, and sugar. Cook covered for 13 to 15 minutes on low heat, stirring occasionally until onions are tender.
  • On a dishtowel place your hot jars and using your funnel in each jar ladle the mixture into the jars leaving 1/4” headspace. Remove air bubbles and refill to the proper headspace if necessary.
  • Make sure your rack is on the bottom of the canner and place the jars in the water bath making sure that the water covers each of the jars by 1 to 2 inches. Add hot water to the canner if it doesn't measure up.
