GARLIC FETA CHEESE DIP

A friend made this at a get-together and it quickly disappeared and was on high demand, so she gave me this recipe. Great if you like garlic! (NOTE: This IS a garlic recipe and has a strong garlic taste!)

Garlic Feta Cheese Dip image

Steps:

In a mixing bowl, combine the above ingredients with mixer until blended well.
Cover and chill until ready to serve.
Serve with vegetables or crackers.

Ingredients

4 ounces crumbled feta cheese
4 ounces cream cheese
1/3 cup mayonnaise
1 garlic clove, minced
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon dill weed
1/8 teaspoon dried thyme

FETA CHEESE DIP

This is based on one of my favorite Claudia Rodan recipes. You need good feta cheese for this. Serve with pita bread to dip in.

With a fork, crush the feta cheese and mash with the lemon juice and the vegetable and olive oils until smooth.

Bring to the boil, stirring till sugar dissolves.
Simmer without stirring till syrupy.
Allow to cool.
Use for strawberries.
Keep in sealed container in fridge.

In a medium bowl, whisk together 2 tablespoons olive oil, 1 teaspoon of Greek seasoning and the balsamic vinegar. Add chopped tomatoes and toss to coat well.
Place the tomatoes in a serving dish, then crumble the feta cheese over top. Sprinkle with the green onions. Toss gently to combine. Sprinkle with remaining Greek seasoning and drizzle with additional olive oil, if desired. Top with fresh chopped parsley.
