This is a unique, gourmet way to serve this fantastic summer fruit! The balsamic vinegar brings out the berries' beautiful color and truly enhances their flavor. Great served with a simple pound cake, over vanilla ice cream, or simply by themselves.

Strawberries with Balsamic Vinegar image

Steps:

  • Place strawberries in a bowl. Drizzle vinegar over strawberries, and sprinkle with sugar. Stir gently to combine. Cover, and let sit at room temperature for at least 1 hour but not more than 4 hours. Just before serving, grind pepper over berries.

Balsamic Strawberries (Not Heated) image

Steps:

  • Rinse the strawberries and pat dry with paper towel. Remove the green hulls and slice strawberries in half.
  • Place the strawberries in a shallow ceramic or glass dish and sprinkle over the sugar. Set aside at room temperature for 10 minutes.
  • Pour the vinegar over the strawberries and st aside, again at room temperature, for another 15 minutes. Turn the strawberries occassionally. A light syrup will form.
  • Serve the balsamic strawberries with some mascarpone, cream or icecream.

Steps:

  • Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  • In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
  • In a medium bowl, toss the berries with the basil and the balsamic syrup.
  • Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.

Steps:

  • Preheat the oven to the lowest possible heat, or use the aga warming oven later. Prepare the strawberries, wash, cut off the tops and halve them lengthways. Place in an oven proof dish.
  • Place the balsamic vinegar, sugar and green peppercorns in a small saucepan and heat over a low heat until the sugar is dissolved. Make sure you don't burn the sugar onto the bottom of the pan.
  • Pour the balsamic vinegar mix over the strawberries and place in the preheated oven or aga warming oven.
  • After about 50 minutes, put the heat of the oven up to 200C, or transfer the strawberries to the aga roasting oven (the hotter one).
  • Remove from the oven and serve with ice cream or frozen yoghurt.
