Steps:

  • 1. Peel and slice the bananas. Divide the slices evenly among 4 ungreased 6-ounce ramekins or souffle dishes.
  • 2. In a small bowl, combine 2 Tbsp. melted butter and the lemon juice. Mix well. Drizzle the butter mixture over the bananas in each ramekin.
  • 3. In a small bowl, combine the oats, walnuts, brown sugar and the remaining melted butter. Mix well. Sprinkle the oat mixture evenly over the bananas.
  • 4. Bake in a preheated 375-degree oven until the bananas are hot and the topping is bubbly, about 10 to 12 minutes. Serve warm with the ice cream and a sprinkle of cinnamon.
  • 5. SOME VARIATIONS: For a tropical taste, use lime juice instead of lemon juice and add 1 tsp. grated fresh ginger. Substitute unsweetened coconut for the walnuts. Add 1/4 tsp. ground cloves to the butter and lemon juice mixture. The flavor of the spice is utterly delicious in this dessert!

4 medium bananas
1/4 c (1/2 stick) butter, melted, divided
1 Tbsp lemon juice
1/4 c quick-cooking oats
1/4 c chopped walnuts
1/4 c light brown sugar, firmly packed
vanilla ice cream
cinnamon

Steps:

  • Line a 9-by-13-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and honey and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt. Add the cereal and 1 cup each of the crushed strawberries and bananas. Stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer. Scatter the remaining crushed fruit on top and press into the top (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
  • Cut into 24 bars. Store at room temperature in an airtight container for up to 3 days.

4 tablespoons unsalted butter, plus more for greasing
One 10-ounce bag mini marshmallows
1 tablespoon honey
1 teaspoon pure vanilla extract
Kosher salt
6 cups toasted whole-grain oat cereal, such as Cheerios
1 1/2 cups freeze-dried strawberries, crushed
1 1/2 cups freeze-dried bananas, crushed

  • Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
  • Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
  • Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.

  • Classic Bananas Foster. Vanilla ice cream is the classic accompaniment for this king of banana recipes, but you could also spoon the saucy mixture over waffles, crepes, French toast, or even toasted slices of banana nut bread.
  • Double Banana Cake. Get ready for banana overload. (Just kidding; there’s no such thing.) This banana dessert has overripe bananas mashed into the batter and slices of banana sandwiched between two cake layers.
  • Caramelized Banana and Almond Nice Cream. For this riff on the popular dairy-free treat, you’ll cook the bananas first to caramelize them and concentrate their flavor.
  • Banana Cream Pie. Cheesecake, who? This is the creamy, yellow-colored dessert we would choose any old time: a showstopping, peanut-studded banana cream pie with sky-high whipped cream.
  • BA’s Best Banana Bread. A dollop of mascarpone makes for superior tenderness in our version of everyone’s favorite breakfast loaf. Walnuts optional but encouraged.
