SPELT PANCAKES
Spelt flour is perfect for pancakes. These fluffy pancakes use 100% spelt flour for a whole grain pancake that makes great breakfast or brunch fare.

Steps:
- Combine milk and lemon juice in a bowl and set aside to sour, about 5 minutes. Add beaten egg and melted butter; stir to combine.
- Combine spelt flour, sugar, baking powder, baking soda, and salt in a large bowl. Stir gently into milk mixture until just combined; batter will be lumpy.
- Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.

HEALTHY BANANA PANCAKES RECIPE BY TASTY

Steps:
- Mash bananas in a large bowl until smooth. Mix in eggs and vanilla until well combined, then mix in oats and cinnamon.
- Heat a skillet to medium and add in a scoop* of the pancake batter. Smooth out to form an even layer. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.
- Garnish your pancakes with your favorite toppings! We used banana slices, chopped walnuts & maple syrup.
- *Note: Use ½ cup (65) for scooping the batter to yield 4 thicker pancakes; Use ⅓ cup (40 g) to yield 6 smaller pancakes.

BANANA PANCAKES WITH SPELT
Organic spelt flour does not change the flavor of the pancake as much as whole wheat, but offers the benefit of additional fiber. With all the processed foods being offered to my kids daily, I thought it might be helpful to get something healthy into their diet as often as possible. No complaint from the kids here!

- Whisk together dry ingredients in a medium bowl.
- In a smaller bowl whisk together the liquids.
- Preheat griddle.
- When a drop of water 'dances' on it, pour liquids over flour mixture and stir to moisten.
- Oil griddle. Spoon batter onto griddle in 4 to 6-inch cakes.
- Turn when top side is thoroughly bubbled. Serve immediately.

- Cut up the bananas into small pieces. I cut the bananas length-wise into quarters and then cut cross-wise into 1/8 inch thick slices. Stir the banana pieces into the batter.
- Cover the mixing bowl with a lid, bee's wrap or a plastic bag, to prevent the top of the batter from drying out. Let the batter ferment in room temperature overnight. I usually make the batter right before going to bed, and cook it first thing in the morning, which allows for approximately 8 hours of fermentation.
