BANANA POPPY SEED QUICK BREAD

From a Dole pamphlet I've had sitting around since 1986! This is a nice twist on a standard banana bread or poppy seed bread. I love the light hint of lemon in the bread too with the lemon zest.

Banana Poppy Seed Quick Bread image

Steps:

  • Mash bananas with a potato masher until all large pieces are broken down (or you can use a blender and puree the bananas) - you should receive about 1 cup of banana total. If not, then add enough banana to equal one cup.
  • Cream together the sugar and butter until light and fluffy.
  • Beat in eggs and grated lemon peel until blended.
  • Combine the flour, baking powder, salt and cinnamon.
  • Beat the bananas into the wet ingredients alternately with the dry ingredients -- repeating twice ending with dry ingredients.
  • Hand stir in the poppy seeds.
  • Pour into a well-greased (or sprayed) 9x5 inch loaf pan.
  • Bake at 350* F for 50-60 minutes until pick inserted in center comes out clean. (The original recipe called for 60-70 minutes but mine is usually done before 60 minutes).
  • Cool in pan for 10-15 minutes before turning out onto a wire rack to completely cool.

Seedy Good-Health Banana Bread image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans with the coconut oil.
  • Beat applesauce, eggs, and butter together in a large bowl until smooth. Add white sugar, raw sugar, vanilla extract, and salt; mix well.
  • Whisk bananas, sour cream, and baking soda together in a separate bowl until smooth; stir into the applesauce mixture until evenly combined.
  • Gradually stir all-purpose flour, 1/4 cup at a time, into banana mixture until well mixed. Gradually stir whole wheat flour, 1/4 cup at a time, into banana-flour mixture until batter is well mixed. Fold almonds, teff, poppy seeds, chia seeds, and flax seeds into the batter. Pour batter into the prepared loaf pans.
  • Bake on the middle rack of the preheated oven until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Cool bread in the pans for 15 minutes before transferring to a wire rack to cool, about 20 minutes.

  • In a small bowl, beat butter and sugar for 2 minutes or until crumbly. Beat in egg and bananas. Combine the flour, baking powder and salt; beat into banana mixture just until blended. Stir in poppy seeds and orange zest. , Transfer to three 5-3/4x3x2-in. loaf pans coated with cooking spray. For topping, cut butter into brown sugar until crumbly. Stir in walnuts.   • In a small bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, combine the egg, milk and oil. Stir into dry ingredients just until moistened. Steps:

  • Mix together the flour, 2 1/4 cups white sugar, baking powder, salt, milk, 1 1/2 teaspoons vanilla and eggs. Mix in the vegetable oil, poppy seeds, 1 1/2 teaspoons butter flavoring and 1 1/2 teaspoons almond flavoring. Beat with an electric mixer for 1 to 2 minutes.
  • Lightly grease 2 loaf pans or 6 small loaf pans. Bake 45-60 minutes at 350 degrees F (175 degrees C). Cool for 3 minutes and top with the orange glaze.
  • To make Orange Glaze: Mix together 1/4 cup orange juice, 3/4 cup sugar, 1/2 teaspoon vanilla, 1/2 teaspoon butter flavoring and 1/2 teaspoon almond flavoring.
