Steps:
- In medium bowl, stir Bisquick mix, milk and eggs until blended. Heat griddle or skillet over medium heat or to 375°F. Grease griddle with vegetable oil if necessary (or spray with cooking spray before heating). For each pancake, use slightly less than 1/4 cup batter. Cook until bubbles break on surface. Turn; cook until golden. Serve immediately, or place on cookie sheet in warm oven until ready to serve.
- In 10-inch nonstick skillet, mix butter, brown sugar, cinnamon, nutmeg, maple syrup and rum extract. Cook mixture over medium-high heat 2 to 3 minutes, stirring constantly with wooden spoon, until sugar dissolves and mixture is thick.
- Reduce heat to medium; add bananas, gently spooning sauce over each piece. Cook about 3 minutes or until bananas are glossy and coated with sauce.
- To serve, place 2 pancakes on each individual plate; spoon about 1/3 cup bananas and sauce over pancakes. Garnish with chopped nuts, and serve immediately.

BANANAS FOSTER
Steps:
- Melt butter in a 10-inch heavy skillet over low heat. Add brown sugar, allspice and nutmeg and stir until sugar dissolves. Add banana liqueur and bring sauce to simmer. Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking. Remove bananas from pan to a serving dish. Bring sauce to a simmer and carefully add the rum. If the sauce is very hot, the alcohol will flame on its own. If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes. If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency. Add orange zest and stir to combine. Immediately spoon the sauce over bananas and serve. Serve with waffles, crepes, or ice cream.

Steps:
- Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
- Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
- Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
- Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

This is a conversion of my mother's pancake recipe. They brown up nicely. Leftovers freeze well, and reheat quickly in the microwave for a fast, hot breakfast. Get the maple syrup ready!

- Carefully crack the eggs into a mixing bowl then add the sugar. Whisk these two ingredients together until they are creamy and pale yellow. Slowly drizzle in the melted butter, whisking to incorporate it into the eggs and sugar. Stir in the coconut milk and baking coconut and set the bowl aside.
- Combine the flour, baking powder and salt in another mixing bowl. Add the dry ingredients to the wet ingredients and stir them together until they create a batter. The batter should be thick but should still pour easily.
- To fry the pancakes, heat a large skillet over medium heat. Once the skillet is hot, spray it with cooking spray. Use a ½ cup scoop to ladle the batter into the skillet, moving the batter to create a round pancake. The batter will begin to bubble after 2-4 minutes. Once this happens, flip the pancake over and cook on the opposite side for another minute or until the underside is lightly browned.

- Melt butter and coconut sugar in a large skillet over medium heat on the stove, stirring occasionally, for 30–60 seconds. Add the milk, salt, cinnamon, and vanilla extract and stir to combine. Cook for 2–3 minutes over medium heat until the sugar melts and sauce begins to bubble. Add banana slices in a single layer across the skillet and cook for 1–2 minutes on each side, or until bananas are cooked to your liking and caramel sauce has thickened. Sauce will continue to thicken as it cools. Remove from heat and cover the pan to keep sauce warm.
- Prepare the Vegan “Buttemilk” Pancakes according to the directions in the recipe. If you’d like a stronger banana flavor, you can add 1–2 mashed ripe bananas to the pancake batter.
- Top a few pancakes with caramel bananas and spoon sauce overtop. Sprinkle toasted nuts over the pancakes and sauce for more crunch and flavor. Makes 2–3 servings.
