Hot Banana Salsa image

Steps:

  • Mix together the banana, red pepper, green pepper, yellow pepper, cilantro, green onion, lime juice, brown sugar, ginger, olive oil, and habanero pepper in a bowl; season with salt. Serve within 1 hour.

½ cup red bell pepper, seeded and diced

1 tablespoon brown sugar
2 teaspoons minced fresh ginger root
2 teaspoons olive oil
1 teaspoon minced habanero pepper
salt to taste

A nice fruit salad for potlucks or outdoor events - my grandmother always made it on the Fourth of July. Bananas, pineapple, and cream cheese in a tangy homemade sauce. Salad can be refrigerated or served immediately.

Steps:

  • Combine pineapple juice, sugar, lemon juice, and cornstarch in a saucepan over medium heat; cook and stir until sugar dissolves and sauce is smooth, about 5 minutes.
  • Stir about 1 tablespoon sauce into the bowl with the egg until egg is slightly warmed. Slowly pour egg mixture into sauce, whisking until sauce is smooth and thickened. Remove saucepan from heat and freeze sauce, stirring occasionally, until completely chilled, about 15 minutes.
  • Mix bananas, cream cheese, and pineapple together in a bowl. Add sauce and mix until evenly coated.

  • Let cook for about 2 minutes.

  • Add onion, tomatoes and peppers and blend well.

  • Preheat oven to 350°F.
  • Spray 9"x5"x3" loaf pan with cooking spray.
  • Beat butter and sugar until light and fluffy, using electric mixer at medium speed.
  • Add bananas, salsa and eggs and mix well. Add flour and baking soda and mix well.
  • Pour mixture into prepared loaf pan.
  • BAKE 1 hours or until done.
  • Cool in pan on wire rack 15 minute.
  • Remove from pan and cool completely on rack.

Darasa (Green Banana Tamales) image

Steps:

  • Heat the oil in a medium cast-iron skillet over medium-high heat. Add the peppers and garlic and cook, stirring, until soft and browned, 2 to 3 minutes.
  • Peel the green bananas and cut them in half. Place the bananas and coconut milk in a blender with the garlic powder, parsley, salt and pepper. Squeeze the orange into the mix before blending on high. The mixture will be a pasty, batter-like consistency.
  • Put the water into a medium pan and bring to a simmer over high heat. Divide the tamale mixture into the middle of the banana leaves. Spoon half of the pepper mixture on top. Fold the leaf horizontally over the mixture, then fold over vertically. Cut two small thin pieces of banana leaf to tie around the tamales vertically and horizontally.
  • Gently place the tamales into the simmering water and cover. Steam/boil the tamales for 10 minutes on each side.
  • Unwrap the tamales from the banana leaf and enjoy!
