LOWER FAT FUDGE BROWNIES
After many tries, I've finally developed a really fudge-y, chewy brownie recipe. Several people in my office are on diets and swear by these. You can use low fat or nonfat yogurt and egg replacers to make it even lower in fat and cholesterol, but the full fat yogurt really adds to the texture of the brownies.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
- In a medium bowl, stir together the sugar, cocoa powder and yogurt. Stir in the eggs one at a time until well blended, then add vanilla and salt. Stir in the flour until just absorbed. Spread evenly into the prepared pan.
- Bake for 28 to 32 minutes in the preheated oven, until the brownies begin to pull away from the sides of the pan, and a toothpick inserted comes out fairly clean (sticky crumbs are okay). Cool brownies in the pan over a wire rack before cutting into squares. Cover tightly with plastic wrap to store.

FUDGY BROWNIES I
A chewy, fudgy, brownie that is easy to make. This is great because it uses things that you may already have on hand.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, stir together the cocoa and baking soda. Add 1/3 cup vegetable oil and boiling water. Mix until well blended and thickened. Stir in the sugar, eggs, and remaining 1/3 cup oil. Finally, add the flour, vanilla and salt; mix just until all of the flour is absorbed. Spread evenly into the prepared pan.
- Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool before cutting into squares.

BANGOR BIG FAT FUDGE BROWNIES
My favorite brownie! I've made these with Kittencal's chocolate buttercream frosting, and the combo was amazing, though sugar-buzz inducing ;-) From the wonderful cookbook, 'The Great American Bake Sale'.

Steps:
- Preheat oven to 350*F.
- Cream butter, sugar, and vanilla in mixing bowl, and beat in eggs.
- In another bowl, stir together flour, cocoa, baking powder and salt with a fork, then blend dry ingredients into egg mixture, but do not over-beat.
- Spread batter into an ungreased 8-inch square pan, and bake 40-45 minutes, until brownie begins to pull away from the edges of the pan.
- Cool completely. Dust with powdered sugar, and cut into squares.
MINTY FUDGE BROWNIES
I adopted this from the Recipezaar account. They are more a cakey brownie when right out of the oven but get more fudgy after cooling. They have a nice light mint flavor. If you can't find the mint chocolate chips you can recreate with regular semi-sweet chips and a few drops of peppermint oil (as that is what makes the mint chips minty).

- Preheat oven to 325° F and grease a 13x9-inch baking pan.
- In a small bowl, combine flour, baking soda, and salt; set aside.
- In medium saucepan, combine sugar, butter and water; bring JUST TO A BOIL then remove from heat.
- Add mint-chocolate chips and vanilla extract; stir until chips are melted and mixture is smooth.
- Transfer to a large bowl and let cool slightly (so you don't cook the eggs).
- Add eggs, one at a time, beating well after each addition.
- Stir in flour mixture gently (be sure not to overmix).
- Stir in nuts, if using.
- Spread into prepared pan.
- Bake for 28-32 minutes.
- Cool completely in pan on a wire rack.

This is the BEST recipe I have ever made from-scratch brownies with. I didn't have the nuts or anything else to add to them, and they still tasted awesome plain. This came from my Better Homes & Gardens cookbook.

- In a medium saucepan, melt butter and chocolate on low heat.

- When melted and smooth, remove from fire.
